Disclosed herein are compounds and methods useful for improving the flavor and suppressing bitter sensations is a variety of food products, including cereals and grains such as wheat.

What is claimed is: 1 . A method for modulating the flavor of a food product, comprising adding to the food product a compound having the formula: wherein R 1 *, R 2 *, R 3 *, R 4 *, R 5 *, R 6 *, R 7 *, and R 8 * are independently selected from H, (CH 2 ) n OH, OC(O)C 1-8 alkyl, NHC(O)CH 3 , CO 2 H, NH 2 , O—C 1-8 alkyl, wherein n is selected from 0 or 1; with the proviso that R 1 * is CO 2 H, R 5 * is CO 2 H, R 4 * is NHC(O)CH 3 , or R 8 * is NHC(O)CH 3 . 2 . The method according to claim 1 , wherein the food product is a grain.
