Improved confectionary compositions using a reduced salt mixture comprising at least one salt substitute, modified salt or modified salt substitute having at least two different particle sizes which give an acceptable texture, stability, clarity and flavor delivery, while having less sodium chloride than traditional salted confectionary compositions.

First claim

1 . A reduced salt mixture comprising at least two or more different particle sizes selected from the group consisting of: a. fine, very fine, coarse, moderately coarse, and very coarse; and, b. at least one salt substitute, modified salt, modified salt substitute or combinations thereof, to reduce the sodium content of a salted confectionary composition by at least 50%. 2 . The reduced salt mixture of claim 1 , wherein the reduced salt mixture reduces the sodium content of a salted confectionary composition by at least 85%. 3 . The reduced salt mixture of claim 1 , wherein the salt substitute, modified salt, or modified salt substitute contain fine particles having a particle size range of 75 to 180 microns, and at least one salt substitute, modified salt, or modified salt substitute contain coarse particles having a particle size range of 180 to about 1,200 microns. 4 . The reduced salt mixture of claim 1 , wherein the salt substitute, modified salt, or modified salt substitute contain very fine and fine particles having a particle size range of 75 to 180 microns, and at least one salt substitute, modified salt, or modified salt substitute containing coarse, moderately coarse and coarse particles having a particle size range of 180 to about 1,200 microns. 5 . The reduced salt mixture of claim 1 , comprising: a. from about 20 wt. % to 50 wt. % of 75 to 180 micron size particles selected from the group consisting of salt substitute, modified salt, modified salt substitute, and combinations thereof; and, b. from about 20 wt. % to 50 wt. % of 180 to 1,200 micron size particles selected from the group consisting of salt substitute, modified salt, modified salt substitute, and combinations thereof. 6 . The reduced salt mixture of claim 1 , comprising: a. from about 10 wt. % to 30 wt. % of 75 to 180 micron size particles selected from the group consisting of salt substitute, modified salt, modified salt substitute, and combinations thereof; and, b. from about 10 wt. % to 30 wt. % of 180 to 1,200 micron size particles selected from the group consisting of salt substitute, modified salt, modified salt substitute, and combinations thereof. 7 . The reduced salt mixture of claim 1 , comprising: a. from about 20 wt. % to 50 wt. % of 75 to 180 micron size particles selected from the group consisting of salt substitute; and, b. from about 20 wt. % to 50 wt. % of 180 to 1,200 micron size particles selected from the group consisting of salt substitute. 8 . The reduced salt mixture of claim 1 , wherein the fine particles having a particle size range of 75 to 180 microns, and the coarse particles having a particle size range of 180 to 1,200 microns are used in a ratio of 1:1 by weight of the reduced salt mixture. 9 . The reduced salt mixture of claim 4 , wherein the very fine and fine particles have a particle size range of 75 to 180 microns, and the coarse, moderately coarse, and very coarse particles have a particle size range of 180 to about 1,200 microns, and are used in a ratio of 1:1 by weight of the reduced salt mixture. 10 . The reduced salt mixture of claim 1 , wherein the salt substitute comprises very fine and fine particles with a particle size range of at least about 75 to 180 microns, and the same salt substitute comprises coarse, moderately coarse and very coarse particles having a particle size range of at least about 180 to 1,200 microns, wherein the fine particle size salt substitute and the coarse particle size salt substitute are used in a ratio of 1:1 by weight of the reduced salt mixture. 11 . The reduced salt mixture of claim 1 , wherein less than 30% of the fine and very fine particles of the salt substitute are retained on pan, and less than 25% of the very coarse, coarse, and moderately coarse particles are retained on pan. 12 . The reduced salt mixture of claim 1 , wherein the salt substitute is selected from the group consisting of potassium chloride, ammonium chloride, calcium chloride, magnesium chloride, potassium lactate, and combinations thereof. 13 . The reduced salt mixture of claim 1 , wherein the modified salt and the modified salt substitute are hollow. 14 . A confectionary composition comprising a reduced salt mixture comprising: a. fine and very fine particles of at least one salt substitute, modified salt, and modified salt substitute and combinations thereof; b. coarse, moderately coarse, and very coarse particles of at least one salt substitute, modified salt, or modified salt substitute and combinations thereof; and wherein the ratio of the fine and very fine particles to coarse, moderately coarse and very coarse particles by weight of the reduced salt mixture is from 1:1 to 1:0.5, or 0.5:1 to 1:1. 15 . The confectionary composition of claim 14 , wherein the reduced salt mixture contains a. fine and very fine particles of at least one salt substitute, a modified salt, and modified salt substitute and combinations thereof; b. coarse, moderately coarse, and very coarse particles of at least one salt substitute, modified salt, modified salt substitute and combinations thereof; and wherein the ratio of the fine and very fine particles to coarse, moderately coarse and very particles is 1:1 to about 1:1.25, or 1:1.25 to about 1:1 by weight of the reduced salt mixture. 16 . The confectionary composition of claim 14 , wherein the reduced salt mixture contains a. fine and very fine particles of at least one salt substitute, modified salt, and modified salt substitute and combinations thereof; b. coarse, moderately coarse, and very coarse particles of a salt substitute, modified salt, modified salt substitute and combinations thereof; and wherein the ratio by weight of the fine and very fine particles to coarse, moderately coarse, and very coarse particles is 1:1 by weight of the reduced salt mixture. 17 . The confectionary composition of claim 14 , wherein the composition is selected from the group consisting of chewy candies, hard candies, gelled candies, toffees, chewing gums, syrups, films, and chocolates. 18 . The confectionary composition of claim 14 , wherein the reduced salt mixture comprises a bulk sweetener, color, flavor, acid and combinations thereof. 19 . The confectionary composition of claim 14 , wherein the reduced salt mixture comprises an anti-caking agent. 20 . The confectionary composition of claim 14 , wherein the reduced salt mixture comprises a salt substitute selected from potassium chloride. 21 . The confectionary composition of claim 14 , wherein the reduced salt mixture comprises a hollow modified salt, with a shape selected from the group consisting of spherical, rod, and flake.
