A psicose 3-epimerase, a polynucleotide encoding the enzyme, a recombinant vector carrying the polynucleotide, a recombinant cell harboring the recombinant vector, and use thereof are provided.

First claim

The invention claimed is: 1. A method for producing psicose, comprising reacting at least one selected from the group consisting of a protein comprising the amino acid sequence of SEQ ID NO: 1, a recombinant cell harboring a recombinant vector carrying a polynucleotide encoding the protein, a culture broth of the recombinant cell, and a lysate of the recombinant cell, with D-fructose. 2. The method of claim 1 , wherein the D-fructose is used at a concentration of 55 to 75% (w/w). 3. The method of claim 1 , wherein the reacting is carried out at a pH of 7 to 10. 4. The method of claim 1 , wherein the reacting is carried out at a temperature of 40 to 70° C. 5. The method of claim 1 , which further comprises adding at least one selected from the group consisting of a copper ion, a manganese ion, a magnesium ion, a zinc ion, a nickel ion, a cobalt ion, an iron ion, an aluminum ion, and a calcium ion. 6. The method of claim 2 , which further comprises adding at least one selected from the group consisting of a copper ion, a manganese ion, a magnesium ion, a zinc ion, a nickel ion, a cobalt ion, an iron ion, an aluminum ion, and a calcium ion. 7. The method of claim 3 , which further comprises adding at least one selected from the group consisting of a copper ion, a manganese ion, a magnesium ion, a zinc ion, a nickel ion, a cobalt ion, an iron ion, an aluminum ion, and a calcium ion. 8. The method of claim 4 , which further comprises adding at least one selected from the group consisting of a copper ion, a manganese ion, a magnesium ion, a zinc ion, a nickel ion, a cobalt ion, an iron ion, an aluminum ion, and a calcium ion. 9. The method of claim 1 , wherein the polynucleotide comprises the nucleotide sequence of SEQ ID NO: 2.
