The invention relates to a process for producing highly soluble compositions containing purified steviol glycosides from Stevia rebaudiana Bertoni plant extract, more particularly Rebaudioside D. Obtained highly soluble compositions are useful as non-caloric sweeteners or in combination with sugar or high intensity sweeteners in edible and chewable compositions such as beverages, confectionaries, bakery products, chewing gums and the like.

The invention claimed is: 1. A highly soluble spray-dried Rebaudioside D composition comprising Rebaudioside D and a component selected from the croup consisting of: a non-glycosidic fraction of Stevia ; molasses; and caramel color; wherein the highly soluble spray-dried Rebaudioside D composition has a water solubility of at least about 0.05% at 20° C. 2. A food product comprising the highly soluble spray-dried Rebaudioside D composition of claim 1 . 3. A beverage product comprising the highly soluble spray-dried Rebaudioside D composition of claim 1 . 4. A pharmaceutical composition comprising the highly soluble spray-dried Rebaudioside D composition of claim 1 . 5. A nutraceutical composition comprising the highly soluble spray-dried Rebaudioside D composition of claim 1 . 6. A tobacco product comprising the highly soluble spray-dried Rebaudioside D composition of claim 1 . 7. An oral hygiene composition comprising the highly soluble spray-dried Rebaudioside D composition of claim 1 . 8. A cosmetic composition comprising the highly soluble spray-dried Rebaudioside D composition of claim 1 . 9. The highly soluble spray-dried Rebaudioside D composition of claim 1 , wherein the composition has a water solubility of 0.1% to 3.5% at 20° C. 10. The highly soluble spray-dried Rebaudioside D composition of claim 1 , wherein the composition has a water solubility of 0.3% to 5.0% at 20° C.
