The present invention is related to the field of bioprotection, in particular to the strain of Lactobacillus paracasei CHCC14676 with accession no. DSM25612. Furthermore, the present invention concerns an antifungal composition comprising the strain, an antifungal composition comprising the strain and at least one strain of Lactobacillus rhamnosus, food, feed and pharmaceutical products comprising such an antifungal composition, a method of manufacturing such food, feed and pharmaceutical products, a method for reducing the content of yeasts and molds of such food, feed and pharmaceutical products and uses of the antifungal composition.

The invention claimed is: 1. An antifungal composition comprising at least one Lactobacillus paracasei strain selected from Lactobacillus paracasei strain CHCC14676 (DSM25612) and mutant strains derived therefrom, wherein the mutant strains have substantially the same or improved antifungal properties as CHCC14676 (DSM25612), wherein the Lactobacillus paracasei strain is capable of inhibiting or preventing the growth of Mucor spp, and wherein the composition comprises an amount of the at least one Lactobacillus paracasei strain effective to inhibit growth of yeasts and molds in the composition and further comprises an effective amount of an added cryoprotectant for the at least one Lactobacillus paracasei strain. 2. The composition according to claim 1 , wherein the composition comprises at least 10 4 colony forming units of the Lactobacillus paracasei strains per gram of the composition. 3. The composition according to claim 1 , wherein the cryoprotectant is selected from one or more of mannitol, sorbitol, sodium tripolyphosphate, xylitol, glycerol, raffinose, maltodextrin, erythritol, threitol, trehalose, glucose and fructose. 4. The composition according to claim 1 , further comprising an additive selected from one or more of yeast extracts, sugars, vitamins, carbohydrates, flavors, minerals, and enzymes. 5. The composition according to claim 1 , further comprising at least one strain of Lactobacillus rhamnosus. 6. The composition according to claim 1 , wherein the composition is in a liquid, frozen, dried, or freeze-dried form. 7. A food, feed or pharmaceutical product, comprising at least one Lactobacillus paracasei strain selected from Lactobacillus paracasei strain CHCC14676 (DSM25612) and mutant strains derived therefrom and an effective amount of an added cryoprotectant for the at least one Lactobacillus paracasei strain, wherein the mutant strains have substantially the same or improved antifungal properties as CHCC14676 (DSM25612), the Lactobacillus paracasei strain is capable of inhibiting or preventing the growth of Mucor spp., and the food, feed or pharmaceutical product comprises an amount of the at least one Lactobacillus paracasei strain effective to inhibit growth of yeasts and molds in the food, feed or pharmaceutical product. 8. The food, feed or pharmaceutical product according to claim 7 , comprising an amount of the at least one Lactobacillus paracasei strain selected from at least 1×10 6 cfu/g of the food, feed or pharmaceutical product, at least 1×10 6 cfu/ml of the food, feed or pharmaceutical product, or at least 1×10 5 cfu/cm 2 of the surface of the food, feed or pharmaceutical product. 9. The food, feed or pharmaceutical product according to claim 7 , further comprising at least one strain of Lactobacillus rhamnosus. 10. A food, feed or pharmaceutical product made by a process comprising adding at least one Lactobacillus paracasei strain selected from Lactobacillus paracasei strain CHCC14676 (DSM25612) and mutant strains derived therefrom and an effective amount of an added cryoprotectant for the at least one Lactobacillus paracasei strain to a food, feed or pharmaceutical product during manufacture in an amount effective to inhibit growth of yeasts and molds in the food, feed or pharmaceutical product, wherein the mutant strains have substantially the same or improved antifungal properties as CHCC14676 (DSM25612), and wherein the Lactobacillus paracasei strain is capable of inhibiting or preventing the growth of Mucor spp. 11. The food, feed or pharmaceutical product according to claim 10 , comprising an amount of the at least one Lactobacillus paracasei strain selected from at least 1×10 6 cfu/g of the food, feed or pharmaceutical product, at least 1×10 6 cfu/ml of the food, feed or pharmaceutical product, or at least 1×10 5 cfu/cm 2 of the surface of the food, feed or pharmaceutical product. 12. The food, feed or pharmaceutical product according to claim 10 , further comprising at least one strain of Lactobacillus rhamnosus.
