A vacuum drying apparatus includes a chamber, a steam supply line, an evacuation line, a circulation line, and a pressurizing and heating unit. The chamber includes an inlet, an outlet, and a treatment space capable of accommodating food. The steam supply line is connected to the inlet and is configured to be capable of supplying steam into the treatment space. The evacuation line is connected to the outlet and is configured to be capable of evacuating the treatment space. The circulation line is provided outside the chamber and causes steam to circulate from the outlet to the inlet. The pressurizing and heating unit is provided in the circulation line. The pressurizing and heating unit includes a pressurizer which includes a first pump and a flow channel diameter restrictor and pressurizes the steam, a heater which is provided between the first pump and the flow channel diameter restrictor and heats steam pressurized by the pressurizer, and a controller that controls at least one of the first pump or the flow channel diameter restrictor in accordance with a pressure of the heater.

What is claimed is: 1. A vacuum drying apparatus, comprising: a chamber including an inlet, an outlet, and a treatment space capable of accommodating food; a steam supply line which is connected to the inlet and is configured to be capable of supplying steam into the treatment space; an evacuation line which is connected to the outlet and is configured to be capable of evacuating the treatment space; a circulation line which is provided outside the chamber and causes steam to circulate from the outlet to the inlet; and a pressurizing and heating unit which is provided in the circulation line and includes a pressurizer which includes a first pump and a flow channel diameter restrictor and pressurizes the steam, a heater which is provided between the first pump and the flow channel diameter restrictor and heats steam pressurized by the pressurizer, and a controller that controls at least one of the first pump or the flow channel diameter restrictor in accordance with a pressure of the heater, wherein the vacuum drying apparatus is configured to be capable of executing blanching treatment of causing steam to circulate between the treatment space at a normal pressure and the circulation line and drying treatment of causing steam to circulate superheated steam to circulate between the treatment space in which a pressure is reduced through the evacuation line and the circulation line. 2. The vacuum drying apparatus according to claim 1 , wherein the pressurizing and heating unit heats steam through the heater in a state in which the flow channel diameter restrictor is fully opened when executing the blanching treatment, and heats steam through the heater in a state in which an degree of opening of the flow channel diameter restrictor is limited when executing the drying treatment. 3. The vacuum drying apparatus according to claim 1 , wherein the pressurizing and heating unit further includes an open valve that discharges, when a pressure of steam pressurized by the pressurizer exceeds an upper limit pressure set in advance, the steam outside the vacuum drying apparatus. 4. The vacuum drying apparatus according to claim 1 , wherein the evacuation line includes a second pump that discharges gas inside the treatment space outside the vacuum drying apparatus, and a valve that selectively opens and closes the evacuation line in such a manner that a pressure of the treatment space is constant. 5. A vacuum drying method, comprising: accommodating food in a treatment space inside a chamber; executing blanching treatment for the food by causing steam to circulate between the treatment space at a normal pressure and a circulation line which is provided outside the chamber and causes steam to circulate from an outlet to an inlet of the chamber; evacuating the treatment space through an evacuation line; and executing drying treatment for the food by causing superheated steam, which is obtained by heating steam discharged from the treatment space in a pressurized state by a pressurizing and heating unit provided in the circulation line, to circulate between the treatment space at a reduced pressure and the circulation line. 6. The vacuum drying method according to claim 5 , wherein the step of executing drying treatment for the food further includes a pressure control step of performing control to inhibit a pressure of superheated steam pressurized by the pressurizing and heating unit from exceeding an upper limit pressure set in advance.
