Methods and apparatus for processing eggs based upon a characteristic such as gender are provided. Material is extracted from each of a plurality of live eggs, the extracted material is assayed to identify eggs having the characteristic, and then eggs identified as having the characteristic are processed accordingly.

The invention claimed is: 1. An egg processing system, comprising: an incoming conveyor system configured to transport a plurality of eggs for processing; an outgoing conveyor system configured to transport the eggs post-processing, the outgoing conveyor system being separate from the incoming conveyor system; an egg cradle table having an array of cradles affixed thereto and configured to receive eggs for processing, the egg cradle table being disposed between the incoming and outgoing conveyor systems; a first lifting head configured to remove eggs from the incoming conveyor system and to place the eggs within the array of cradles, the egg cradle table being movable relative to the first lifting head; and a second lifting head configured to remove eggs from the array of cradles and to place the eggs on the outgoing conveyor system, the egg cradle table being movable relative to the second lifting head. 2. The egg processing system of claim 1 wherein the egg cradle table is slidably mounted to a frame between the incoming and outgoing conveyor systems and configured to transport incoming eggs to at least one of an injection station and a sampling apparatus. 3. The egg processing system of claim 2 , wherein the sampling apparatus is configured to extract a sample material from the eggs. 4. The egg processing system of claim 1 , wherein each cradle is configured to receive a respective egg in a generally vertical orientation. 5. An egg processing system, comprising: an incoming conveyor system configured to transport a plurality of eggs for processing; an outgoing conveyor system configured to transport the eggs post-processing, the outgoing conveyor system being separate from the incoming conveyor system; an egg cradle table having an array of cradles configured to receive eggs for processing, the egg cradle table being disposed between the incoming and outgoing conveyor systems; means for transferring eggs from the incoming conveyor system to the array of cradles; means for transferring eggs from the array of cradles to the outgoing conveyor system; and means for moving the egg cradle table relative to the means for transferring eggs from the incoming conveyor system and to the means for transferring eggs from the array of cradles. 6. The egg processing system of claim 5 , wherein the egg cradle table is slidably mounted to a frame between the incoming and outgoing conveyor systems and configured to transport incoming eggs to at least one of an injection station and a sampling apparatus. 7. The egg processing system of claim 6 , wherein the sampling apparatus is configured to extract a sample material from the eggs. 8. The egg processing system of claim 5 , wherein each cradle is configured to receive a respective egg in a generally vertical orientation.
