An egg transfer system is provided. Such an egg transfer system includes a controller configured to receive a classification signal indicative of an egg classification status for each of a plurality of eggs carried by a flat. A transfer head assembly is in communication with the controller and is configured to remove a plurality of eggs from the flat. The eggs are grouped into at least a first and second subset based on the egg classification status. The controller is configured to direct the transfer head assembly to selectively release the first and second subsets separately based on the respective egg classification status of the eggs. An associated method is also provided.

That which is claimed: 1. An egg processing system, comprising: a frame; a transfer head assembly coupled to the frame, the transfer head assembly having a plurality of lifting devices configured to lift eggs from an egg carrier, and an egg discard receptacle coupled with the frame, the egg discard receptacle being configured to be moveably disposed between the lifting devices and the egg carrier such that the egg discard receptacle is capable of being positioned to receive eggs released from the lifting devices while concurrently obstructing access of the lifting devices to the egg carrier. 2. An egg processing system according to claim 1 , further comprising a controller configured to receive a classification signal indicative of an egg classification status for each of a plurality of eggs carried by the egg carrier. 3. An egg processing system according to claim 2 , further comprising a classification device in communication with the controller and configured to classify the eggs according to the egg classification status. 4. An egg processing system according to claim 3 , wherein the classification device is a candling device configured to classify the eggs according to egg opacity. 5. An egg processing system according to claim 1 , further comprising a conveyor assembly operably engaged with the frame, the conveyor assembly being configured to transport eggs beneath the transfer head assembly for removal from the egg carrier. 6. A method of processing eggs, the method comprising: disposing a plurality of eggs contained within an egg carrier proximate to an egg processing system having a plurality of lifting devices configured to lift eggs from the egg carrier; descending at least one of the lifting devices to engage a respective egg for removal thereof from the egg carrier; lifting the at least one lifting device and the respective egg; moving an egg discard receptacle between the egg carrier and the lifting devices, the egg discard receptacle being coupled with a frame of the egg processing system; depositing any eggs removed from the egg carrier on the egg discard receptacle upon release from the lifting devices; and moving the egg discard receptacle from between the egg carrier and the lifting devices such that the lifting devices are capable of descending to interact with eggs contained in a subsequent egg carrier. 7. A method according to claim 6 , further comprising the steps of transporting the eggs contained within the egg carrier to a classification device, and classifying the eggs using the classification device so as to assign each egg an egg classification status. 8. A method according to claim 7 , wherein classifying the eggs comprises classifying the eggs using a candling device as having one of a viable and non-viable status as the egg classification status. 9. A method according to claim 7 , wherein classifying the eggs comprises classifying the eggs as having one of a male and female status as the egg classification status. 10. A method according to claim 7 , further comprising the steps of generating a selective release signal based on the egg classification of each egg, and transmitting the selective release signal to a controller in communication with the lifting devices and configured to direct selective release of the eggs.
