The present invention relates to isolated polypeptides having protease activity, and polynucleotides encoding the polypeptides. The invention also relates to nucleic acid constructs, vectors, and host cells comprising the polynucleotides as well as methods of using the polypeptides in beer production.

The invention claimed is: 1. A nucleic acid construct or expression vector comprising a polynucleotide encoding a polypeptide having protease activity, wherein the polynucleotide is operably linked to one or more heterologous control sequences that direct the production of the polypeptide in an expression host, and wherein the polypeptide having protease activity comprises an amino acid sequence having at least 85% sequence identity to the amino acid sequence of SEQ ID NO: 1. 2. An isolated recombinant host cell transformed with the nucleic acid construct or expression vector of claim 1 . 3. A method of producing a polypeptide having protease activity, comprising cultivating the isolated recombinant host cell of claim 2 , under conditions conducive for production of the polypeptide. 4. The nucleic acid construct or expression vector of claim 1 , wherein the polypeptide having protease activity comprises an amino acid sequence that has at least 90% sequence identity to the amino acid sequence of SEQ ID NO: 1. 5. The nucleic acid construct or expression vector of claim 1 , wherein the polypeptide having protease activity comprises an amino acid sequence that has at least 95% sequence identity to the amino acid sequence of SEQ ID NO: 1. 6. The nucleic acid construct or expression vector of claim 1 , wherein the polypeptide having protease activity comprises an amino acid sequence that has at least 99% sequence identity to the amino acid sequence of SEQ ID NO: 1. 7. The nucleic acid construct or expression vector of claim 1 , wherein the polypeptide having protease activity is encoded by a polynucleotide comprising a nucleotide sequence having at least 90% sequence identity to the nucleotide sequence of SEQ ID NO: 2. 8. The nucleic acid construct or expression vector of claim 1 , wherein the polypeptide having protease activity is encoded by a polynucleotide comprising a nucleotide sequence having at least 95% sequence identity to the nucleotide sequence of SEQ ID NO: 2. 9. The nucleic acid construct or expression vector of claim 1 , wherein the polypeptide having protease activity is encoded by a polynucleotide comprising a nucleotide sequence having at least 99% sequence identity to the nucleotide sequence of SEQ ID NO: 2. 10. The nucleic acid construct or expression vector of claim 1 , wherein the polypeptide having protease activity comprises the amino acid sequence of SEQ ID NO: 1. 11. An isolated recombinant host cell transformed with the nucleic acid construct or expression vector of claim 4 . 12. An isolated recombinant host cell transformed with the nucleic acid construct or expression vector of claim 5 . 13. An isolated recombinant host cell transformed with the nucleic acid construct or expression vector of claim 6 . 14. An isolated recombinant host cell transformed with the nucleic acid construct or expression vector of claim 10 . 15. A method of producing a polypeptide having protease activity, comprising cultivating the isolated recombinant host cell of claim 11 , under conditions conducive for production of the polypeptide. 16. A method of producing a polypeptide having protease activity, comprising cultivating the isolated recombinant host cell of claim 12 , under conditions conducive for production of the polypeptide. 17. A method of producing a polypeptide having protease activity, comprising cultivating the isolated recombinant host cell of claim 13 , under conditions conducive for production of the polypeptide. 18. A method of producing a polypeptide having protease activity, comprising cultivating the isolated recombinant host cell of claim 14 , under conditions conducive for production of the polypeptide.
