Circular stapling instruments and anvil assemblies. The anvil assemblies may have collapsible anvil support members that may be inserted through an opening in a patient and then expanded to be attached to an anvil plate assembly that has a staple-forming surface thereon. The anvil support member is attachable to the anvil plate assembly in such a way that when the anvil assembly is coupled to the stapling head of a circular stapler, the staple-forming surface is in substantial registry with the staples supported in the stapling head. A variety of different anvil support members and anvil plate assemblies are disclosed.

What is claimed is: 1. A collapsible anvil assembly for a circular stapling instrument, said collapsible anvil assembly comprising: an anvil plate assembly comprising a plurality of anvil plates movably coupled together for selective movement between a collapsed orientation and an expanded orientation wherein said plurality of anvil plates form an annular staple forming surface when in said expanded orientation; an anvil shaft including a shaft body and a distal end and a proximal end, said proximal end configured for removable operable attachment to the circular stapling instrument; and a plurality of anvil support arms, each said anvil support arm comprising a support arm body and a first end that is movably attached to said distal end of said anvil shaft, each said support arm body terminating in a second end, each said anvil support arm movable from an insertion position wherein said second end thereof is adjacent to a portion of said shaft body and an expanded support position wherein said support arm bodies are substantially coplanar with each other, each said second end configured for removable attachment to said anvil plate assembly when said plurality of anvil support arms are in said expanded support position and said anvil plates are in said expanded orientation. 2. The collapsible anvil assembly of claim 1 wherein said anvil shaft defines an anvil shaft axis and wherein when said anvil support arms are in said expanded support positon, said anvil support arms lie along a plane that is transverse to said anvil shaft axis. 3. The collapsible anvil assembly of claim 1 further comprising means for releasably retaining said anvil support arms in said expanded support position. 4. The collapsible anvil assembly of claim 3 wherein said means for releasably retaining comprises: a plurality of detents on said distal end of said anvil shaft wherein each said detent corresponds to one of said anvil support arms; and a notch in said distal end of each said anvil support arm, each said notch configured to releasably engage said detent corresponding to said anvil support arm. 5. The collapsible anvil assembly of claim 1 further comprising means for releasably attaching said second end of each said anvil support arm to said anvil plate assembly. 6. The collapsible anvil assembly of claim 5 wherein said means for releasably attaching comprises an attachment tab on said second end of each said anvil support arm, each said attachment tab configured to releasably engage a corresponding portion of said anvil plate assembly when said anvil plate assembly is in said expanded orientation. 7. The collapsible anvil assembly of claim 1 wherein said plurality of anvil plates are movably coupled together by a plurality of hinges. 8. The collapsible anvil assembly of claim 7 wherein said plurality of anvil plates comprises four arcuate plate segments coupled by said hinges in end-to-end fashion such that when said four arcuate plate segments are in said collapsed orientation, said four arcuate plate segments may be substantially stacked on top of each other. 9. The collapsible anvil assembly of claim 1 wherein each said anvil plate comprises an arcuate plate segment having two ends wherein each said end has an attachment joint configured to slidably mate with a joint formation formed on an adjacent said arcuate plate segment when said plurality of anvil plates are in said expanded orientation. 10. The collapsible anvil assembly of claim 9 wherein each said anvil plate has a forming surface and wherein each said attachment joint has an attachment tab portion that is substantially parallel to said forming surface. 11. The collapsible anvil assembly of claim 1 wherein each said anvil plate comprises an arcuate plate segment and wherein said arcuate plate segments are movably coupled together by a plurality of spring clips. 12. A collapsible anvil assembly for a circular stapling instrument, said collapsible anvil assembly comprising: an anvil plate assembly comprising a plurality of anvil plates movably coupled together for selective movement between a collapsed orientation and an expanded orientation wherein said plurality of anvil plates form an annular staple forming surface when in said expanded orientation; an anvil shaft including a shaft body and a distal end and a proximal end, said proximal end configured for removable operable attachment to the circular stapling instrument, said anvil shaft defining a shaft axis; a plurality of anvil support arms, each said anvil support arm comprising a support arm body and a first end that is movably attached to said distal end of said anvil shaft, each said support arm body terminating in a second end, each said anvil support arm movable from a first insertion position wherein said second end thereof is adjacent to a portion of said shaft body and an expanded support position wherein said support arm bodies are substantially coplanar with each other and lie along a plane that is transverse to said shaft axis; means for releasably retaining said anvil support arms in said expanded support position; and means for releasably attaching said second end of each said anvil support arm to said anvil plate assembly when said plurality of anvil support arms are in said expanded support position and said anvil plates are in said expanded orientation. 13. The collapsible anvil assembly of claim 12 wherein said means for releasably retaining comprises: a plurality of detents on said distal end of said anvil shaft wherein each said detent corresponds to one of said anvil support arms; and a notch in said distal end of each said anvil support arm, each said notch configured to releasably engage said detent corresponding to said anvil support arm. 14. The collapsible anvil assembly of claim 12 wherein said means for releasably attaching comprises an attachment tab on said second end of each said anvil support arm, each said attachment tab configured to releasably engage a corresponding portion of said anvil plate assembly when said anvil plate assembly is in said expanded orientation. 15. The collapsible anvil assembly of claim 12 wherein said plurality of anvil plates are movably coupled together by a plurality of hinges. 16. The collapsible anvil assembly of claim 15 wherein said plurality of anvil plates comprises four arcuate plate segments coupled by said hinges in end-to-end fashion such that when said four arcuate plate segments are in said collapsed orientation, said four arcuate plate segments may be substantially stacked on top of each other. 17. The collapsible anvil assembly of claim 12 wherein each said anvil plate comprises an arcuate plate segment having two ends wherein each said end has an attachment joint configured to slidably mate with a joint formation formed on an adjacent said arcuate plate segment when said plurality of anvil plates are in said expanded orientation. 18. The collapsible anvil assembly of claim 12 wherein each said anvil plate comprises an arcuate plate segment and wherein said arcuate plate segments are movably coupled together by a plurality of spring clips. 19. The collapsible anvil assembly of claim 17 wherein each said anvil plate has a forming surface and wherein each said attachment joint has an attachment tab portion that is substantially parallel to said forming surface. 20.
