This invention relates to unsaturated polyol esters that can be used in hydraulic fluid applications, including fire-resistant hydraulic fluid applications, marine hydraulic fluid applications, metalworking fluid applications, food grade fluid applications, and transformer fluid applications, and methods for making the same.

The invention claimed is: 1. An unsaturated polyol ester composition comprising a compound of the following structure: wherein R is (CH 2 ) 7 CH═CH 2 or (CH 2 ) 7 CH═CHCH 3 . 2. The unsaturated polyol ester composition of claim 1 , wherein the composition is a hydraulic fluid. 3. The unsaturated polyol ester composition of claim 1 , wherein R is (CH 2 ) 7 CH═CH 2 . 4. The unsaturated polyol ester composition of claim 1 , wherein R is (CH 2 ) 7 CH═CHCH 3 . 5. An unsaturated polyol ester composition comprising a compound of the following structure: wherein R is an unsaturated C9 linear alkyl group, and each R 1 is independently the hydrocarbyl moiety of a C3 to C35 linear or branched saturated fatty acid selected from the group consisting of isononanoic acid, neodecanoic acid, 2-ethylhexanoic acid, caproic acid, and caprylic acid. 6. The unsaturated polyol ester composition of claim 5 , wherein R is (CH 2 ) 7 —CH═CH 2 .
