What is claimed is: 1. A hair styling composition comprising: (a) latex acrylate polymer A having a Young's modulus ranging from about 0.1 MPa to about 10 MPa, and a strain, under stress at 0.5 MPa, of at least about 1%, wherein latex acrylate polymer A is Acrylates copolymer, Acrylates/Etylhexyl Acrylate copolymer, or Acrylates/VA copolymer; (b) latex acrylate polymer B having a Young's modulus ranging from about 10 MPa to about 6 GPa, and a strain, under stress at 0.5 MPa, of less than about 5%, wherein latex acrylate polymer B is Acrylates copolymer, Polyacrylate-2 crosspolymer, or Styrene/Acrylic copolymer; and at least one component chosen from coalescing agents and plasticizers; wherein the total combined amount of latex acrylate polymers A and B ranges from about 0.1% to about 30% by weight, relative to the weight of the composition; wherein the weight ratio of latex acrylate polymers A:B ranges from about 10:1 to about 1:10; and wherein latex acrylate polymers A and B are dispersed particles in an aqueous dispersion medium. 2. The hair styling composition of claim 1 , wherein latex acrylate polymers A and B are present in a total combined amount ranging from about 0.5% to about 10% by weight, relative to the weight of the composition. 3. The hair styling composition of claim 1 , wherein latex acrylate polymers A and B are present in a total combined amount ranging from about 1% to about 5% by weight, relative to the weight of the composition. 4. The hair styling composition of claim 1 , wherein latex acrylate polymers A and B are present in a total combined amount ranging from about 1% to about 3% by weight, relative to the weight of the composition. 5. The hair styling composition of claim 1 , wherein latex acrylate polymers A and B are present in individual amounts ranging from about 0.05% to about 10% by weight, relative to the weight of the composition. 6. The hair styling composition of claim 1 , wherein latex acrylate polymers A and B are present in individual amounts ranging from about 1% about 15% by weight, relative to the weight of the composition. 7. The hair styling composition of claim 1 , wherein the weight ratio of latex acrylate polymers A:B ranges from about 1:5 to about 5:1. 8. The hair styling composition of claim 1 , wherein the weight ratio of latex acrylate polymers A:B ranges from about 1:3 to about 3:1. 9. The hair styling composition of claim 1 , wherein the weight ratio of latex acrylate polymers A:B ranges from about 1:2 to about 2:1. 10. The hair styling composition of claim 1 , wherein the weight ratio of latex acrylate polymers A:B is about 1:1. 11. The hair styling composition of claim 1 , wherein the weight ratio of latex acrylate polymers A:B ranges from about 1:10 to about 1:1. 12. The hair styling composition of claim 1 , wherein the weight ratio of latex acrylate polymers A:B ranges from about 3:1 to about 10:1. 13. The hair styling composition of claim 1 , wherein the weight ratio of latex acrylate polymers A:B ranges from about 5:1 to about 10:1. 14. The hair styling composition of claim 1 , wherein the at least one component chosen from coalescing agents and plasticizers is present in a total amount ranging from about 0.1% to about 20% by weight, relative to the weight of the composition. 15. The hair styling composition of claim 1 , wherein the at least one component chosen from coalescing agents and plasticizers is present in a total amount ranging from about 0.1% to about 1% by weight, relative to the weight of the composition. 16. The hair styling composition of claim 1 , wherein the at least one component chosen from coalescing agents and plasticizers is chosen from glycol ethers, glycol esters, sucrose esters, propylene glycol ethers and propylene glycol esters. 17. The hair styling composition of claim 1 , wherein the at least one component chosen from coalescing agents and plasticizers is chosen from propylene glycol dibenzoate, dipropylene glycol dibenzoate, and propylene glycol butyl ether. 18. The hair styling composition of claim 1 , further comprising at least one solvent. 19. A method of styling the hair, said method comprising applying to the a hair a composition comprising: (a) latex acrylate polymer A having a Young's modulus ranging from about 0.1 MPa to about 10 MPa, and a strain, under stress at 0.5 MPa, of at least about 1%, wherein latex acrylate polymer A is Acrylates copolymer, Acrylates/Ethylhexyl Acrylate copolymer, or Acrylates/VA copolymer; (b) latex acrylate polymer B having a Young's modulus ranging from about 10 MPa to about 6 GPa, and a strain, under stress at 0.5 MPa, of less than about 5%, wherein latex acrylate polymer B is Acrylates copolymer, Polyacrylate-2 crosspolymer, or Styrene/Acrylic copolymer; and at least one component chosen from coalescing agents and plasticizers; wherein the total combined amount of latex acrylate polymers A and B ranges from about 0.1% to about 30% by weight, relative to the weight of the composition; wherein the weight ratio of latex acrylate polymers A:B ranges from about 10:1 to about 1:10; and wherein latex acrylate polymers A and B are dispersed particles in an aqueous dispersion medium. 20.
