A changing color composition for caring for and/or making up keratin materials is disclosed. The composition comprises in a physiologically acceptable medium, at least: a) microcapsules containing releasable colorant(s), said microcapsules comprising: a core comprising one organic material, at least one layered coating surrounding said core, the layered coating comprising at least one polymer, at least one colorant, and advantageously at least one lipid-based material, b) at least 3% by weight, preferably at least 5 by weight, more preferably at least 8% by weight and advantageously at least 10% by weight relative to the weight of the composition of an aqueous phase comprising water and at least one compound chosen from polyols, glycols and C 2 -C 8 monoalcohols, and mixtures thereof, c) at least one hydrophilic gelifying agent, d) and optionally 0.1 to 70% by weight relative to the weight of the composition, of additional cosmetic ingredient(s) selected from volatile and non-volatile silicon or hydrocarbon oils, surfactants, filler, thickening agents, film forming agents, polymers, preservatives, silicon elastomer, self-tanning agents, additional non-entrapped colorants, cosmetic actives, pH regulators, perfumes, and mixtures thereof.

What is claimed is: 1. A changing color composition, comprising, in a physiologically acceptable medium: a) microcapsules comprising: a core comprising one monosaccharide-polyol selected from the group consisting of mannitol, erythritol, xylitol, sorbitol and mixtures thereof, and a layered coating comprising at least two layers surrounding the core, the layered coating comprising a polymer, a colorant, and optionally a lipid-based material, b) at least 3% by weight, relative to a weight of the composition, of an aqueous phase comprising water and at least one compound selected from the group consisting of a polyol, a glycol and a C 2 -C 8 monoalcohol, c) a hydrophilic gelifying agent, and d) optionally 0.1 to 70% by weight relative to the weight of the composition, of one or more additional cosmetic ingredients selected from the group consisting of a volatile or nonvolatile silicon or hydrocarbon oil, a surfactant, a filler, a thickening agent, a film forming agent, a polymer, a preservative, a silicone elastomer, a self-tanning agent, an additional non-entrapped colorant, a cosmetic active, a pH regulator, and a perfume, wherein the core does not comprise a colorant material, and the microcapsules comprise at least two layers of different colors. 2. The changing color composition according to claim 1 , wherein the core comprises mannitol. 3. The changing color composition according to claim 1 , wherein the layered coating surrounding the core comprises a hydrophilic polymer selected from the group consisting of: an acrylic acid homopolymer or salt thereof; an acrylic acid copolymer or salt thereof; a methacrylic acid homopolymer or salt thereof; a methacrylic acid copolymer or salt thereof; an ester of an acrylic acid homopolymer or copolymer; an ester of a methacrylic acid homopolymer or copolymer; a copolymer of acrylic acid and of acrylamide, or a salt or ester thereof; a polyhydroxycarboxylic acid, or a salt or ester thereof; a polyacrylic acid/alkyl acrylate copolymer; AMPS (polyacrylamidomethylpropanesulfonic acid partially neutralized with aqueous ammonia); an AMPS/acrylamide copolymer; a polyoxyethylenated AMPS/alkyl methacrylate copolymer; chitin or chitosan; a cellulose polymer or derivative thereof; a starch polymer or derivative thereof, optionally modified; a vinyl polymer or derivative thereof; an alginate or a carrageenan; a glycoaminoglycan, hyaluronic acid or a derivative thereof; and a mucopolysaccharide. 4. The changing color composition according to claim 1 , wherein the hydrophilic gelifying agent is at least one selected from the group consisting of an acrylate/C 10 -C 30 -alkylacrylate copolymer, a polyacrylic acid (carbomer), xanthan gum, a carboxyvinylic polymer synthesized in methylene chloride, and ammonium polyacryloyldimethyltaurate. 5. The changing color composition according to claim 1 , wherein a weight % of the colorant is from 20% to 90% by weight relative to the weight of the microcapsule. 6. The changing color composition according to claim 1 , wherein the multi-layered coating surrounding the core comprises three or more layers of different colors. 7. The changing color composition according to claim 1 , wherein the microcapsules further comprise a lipid based material. 8. The changing color composition according to claim 1 , wherein a diameter of the microcapsules is from 50 μm to 800 μm and the layered coating comprises: (i) a first layer (B) surrounding the core comprising: a colorant, and at least one binder selected from the group consisting of a polymer and a lipid-based material; (ii) a second layer (C) surrounding the first layer (B), comprising: titanium dioxide particles, and at least one binder selected from the group consisting of a polymer and a lipid-based material; (iii) optionally a third layer (D) surrounding the second layer (C) comprising: a colorant, and at least one binder selected from the group consisting of a polymer and a lipid-based material; (iv) optionally a fourth layer (E) surrounding the third layer (D), if present, or surrounding the second layer (C), comprising a wall-forming polymer. 9. The changing color composition according to claim 1 , wherein the weight of the microcapsules is from 0.1% to 20% by weight based on the weight of the composition. 10. The changing color composition according to claim 1 , which is in the form of a water-in-oil emulsion or an oil-in-water emulsion. 11. The changing color composition according to claim 1 , wherein the amount of water is at least 30% by weight relative to the total weight of the composition. 12. The changing color composition according to claim 1 , wherein at least one layer of the microcapsules is obtained by a fluid bed process. 13. A cosmetic process for caring for and/or making up a keratinic material, comprising contacting the changing color composition according to claim 1 with the keratinic material.
