The present invention relates to isolated polypeptides having carboxypeptidase activity and isolated polynucleotides encoding the polypeptides. The invention also relates to nucleic acid constructs, vectors, and host cells comprising the polynucleotides as well as methods of producing and using the polypeptides.

What is claimed is: 1. A method of producing a hydrolysate from a proteinaceous substrate which comprises subjecting the substrate to an endopeptidase and a polypeptide having carboxypeptidase activity, selected from the group consisting of: (a) a polypeptide comprising an amino acid sequence having at least 95% sequence identity to the mature polypeptide of SEQ ID NO: 2; and (b) a polypeptide encoded by a polynucleotide comprising a nucleotide sequence having at least 95% sequence identity to the mature polypeptide coding sequence of SEQ ID NO: 1; wherein said polypeptide has the carboxypeptidase activity of SEQ ID NO: 2. 2. The method of claim 1 , wherein the polypeptide comprises the amino acid sequence of SEQ ID NO: 2 or the mature polypeptide thereof; or a fragment thereof having carboxypeptidase activity. 3. The method of claim 1 , wherein the polypeptide is encoded by the polynucleotide contained in plasmid pTter44C2 which is contained in E. coli NRRL B-50207. 4. A method of obtaining from a proteinaceous substrate a hydrolysate enriched in free glutamic acid and/or peptide bound glutamic acid residues, comprising subjecting the substrate to a deamidation process and a polypeptide having carboxypeptidase activity, selected from the group consisting of: (a) a polypeptide comprising an amino acid sequence having at least 95% sequence identity to the mature polypeptide of SEQ ID NO: 2; and (b) a polypeptide encoded by a polynucleotide comprising a nucleotide sequence having at least 95% sequence identity to the mature polypeptide coding sequence of SEQ ID NO: 1; wherein said polypeptide has the carboxypeptidase activity of SEQ ID NO: 2. 5. The method of claim 4 , wherein the polypeptide comprises the amino acid sequence of SEQ ID NO: 2 or the mature polypeptide thereof; or a fragment thereof having carboxypeptidase activity. 6. The method of claim 4 , wherein the polypeptide is encoded by the polynucleotide contained in plasmid pTter44C2 which is contained in E. coli NRRL B-50207. 7. The method of claim 4 , further comprising subjecting the substrate to one or more unspecific acting endo- and/or exo-peptidase enzymes. 8. The method of claim 1 , wherein the polypeptide comprises an amino acid sequence having at least 95% sequence identity to the mature polypeptide of SEQ ID NO: 2. 9. The method of claim 1 , wherein the polypeptide comprises an amino acid sequence having at least 96% sequence identity to the mature polypeptide of SEQ ID NO: 2. 10. The method of claim 1 , wherein the polypeptide comprises an amino acid sequence having at least 97% sequence identity to the mature polypeptide of SEQ ID NO: 2. 11. The method of claim 1 , wherein the polypeptide comprises an amino acid sequence having at least 98% sequence identity to the mature polypeptide of SEQ ID NO: 2. 12. The method of claim 1 , wherein the polypeptide comprises an amino acid sequence having at least 99% sequence identity to the mature polypeptide of SEQ ID NO: 2. 13. The method of claim 1 , wherein the polypeptide is encoded by a polynucleotide comprising a nucleotide sequence having at least 95% sequence identity to the mature polypeptide coding sequence of SEQ ID NO: 1. 14. The method of claim 1 , wherein the polypeptide is encoded by a polynucleotide comprising a nucleotide sequence having at least 96% sequence identity to the mature polypeptide coding sequence of SEQ ID NO: 1. 15. The method of claim 1 , wherein the polypeptide is encoded by a polynucleotide comprising a nucleotide sequence having at least 97% sequence identity to the mature polypeptide coding sequence of SEQ ID NO: 1. 16. The method of claim 1 , wherein the polypeptide is encoded by a polynucleotide comprising a nucleotide sequence having at least 98% sequence identity to the mature polypeptide coding sequence of SEQ ID NO: 1. 17. The method of claim 1 , wherein the polypeptide is encoded by a polynucleotide comprising a nucleotide sequence having at least 99% sequence identity to the mature polypeptide coding sequence of SEQ ID NO: 1. 18. The method of claim 4 , wherein the polypeptide comprises an amino acid sequence having at least 95% sequence identity to the mature polypeptide of SEQ ID NO: 2. 19. The method of claim 4 , wherein the polypeptide comprises an amino acid sequence having at least 96% sequence identity to the mature polypeptide of SEQ ID NO: 2. 20. The method of claim 4 , wherein the polypeptide comprises an amino acid sequence having at least 97% sequence identity to the mature polypeptide of SEQ ID NO: 2. 21. The method of claim 4 , wherein the polypeptide comprises an amino acid sequence having at least 98% sequence identity to the mature polypeptide of SEQ ID NO: 2. 22. The method of claim 4 , wherein the polypeptide comprises an amino acid sequence having at least 99% sequence identity to the mature polypeptide of SEQ ID NO: 2. 23. The method of claim 4 , wherein the polypeptide is encoded by a polynucleotide comprising a nucleotide sequence having at least 95% sequence identity to the mature polypeptide coding sequence of SEQ ID NO: 1. 24. The method of claim 4 , wherein the polypeptide is encoded by a polynucleotide comprising a nucleotide sequence having at least 96% sequence identity to the mature polypeptide coding sequence of SEQ ID NO: 1. 25. The method of claim 4 , wherein the polypeptide is encoded by a polynucleotide comprising a nucleotide sequence having at least 97% sequence identity to the mature polypeptide coding sequence of SEQ ID NO: 1. 26. The method of claim 4 , wherein the polypeptide is encoded by a polynucleotide comprising a nucleotide sequence having at least 98% sequence identity to the mature polypeptide coding sequence of SEQ ID NO: 1. 27.
