The present invention is directed to processes for preparing oil compositions having a high concentration of poly-unsaturated fatty acids and oil compositions having a low concentration of α-linolenic acid. In addition, the present invention is directed to processes for preparing oil compositions having advantageous stability characteristics.

What is claimed is: 1. A process for maintaining the storage stability of an oil during shipment or storage, the process comprising storing an oil in a container at a temperature ranging from about 4° C. to about 45° C. for at least one month, wherein either (i) the oil has an anisidine value of less than 3 after storage; or (ii) the absolute change in the anisidine value of the oil during storage is no more than about 20; and wherein the process for preparing the oil comprises degumming a crude oil under an inert atmosphere to form a degummed oil; contacting the degummed oil with a bleaching material under process conditions that minimize oxidation to form a bleached oil; and deodorizing the bleached oil in a continuous deodorizer at a temperature from 220° C. to 255° C. at a pressure of less than about 1.4 kPa and a residence time of up to 30 minutes to form the oil composition having an anisidine value of less than about 3. 2. The process of claim 1 , wherein the absolute change in the anisidine value of the oil during storage is no more than about 20. 3. The process of claim 2 wherein the absolute change in the anisidine value of the oil during storage is no more than about 10. 4. The process of claim 2 wherein the oil is stored in an oxygen-free or reduced-oxygen atmosphere. 5. The process of claim 2 wherein the oil is stored at about room temperature. 6. The process of claim 2 wherein the oil is stored at about room temperature for at least 12 months. 7. The process of claim 2 wherein the oil is stored under refrigeration. 8. The process of claim 2 wherein the oil is stored under refrigeration for at least 12 months or more. 9. The process of claim 2 wherein at least one stabilizer is added to the oil prior to or during storage. 10. The process of claim 9 wherein the stabilizer comprises at least one complexing agent. 11. The process of claim 10 wherein the complexing agent comprises phosphoric acid, ethylene diamine tetraacetic acid (EDTA), nitrilotriacetic acid (NTA), citric acid, malic acid, lecithin, or derivative or mixture thereof. 12. The process of claim 2 wherein the oil is derived from a source other than a marine oil. 13. The process of claim 2 wherein the oil is derived from a plant oil other than blackcurrant oil, borage oil, Echium oil, evening primrose oil, gooseberry oil hemp oil, or redcurrant oil. 14. A process for maintaining the storage stability of an oil during shipment or storage, the process comprising storing an oil in a container; and freezing the container; wherein the process for preparing the oil comprises degumming a crude oil under an inert atmosphere to form a degummed oil; contacting the degummed oil with a bleaching material under process conditions that minimize oxidation to form a bleached oil; and deodorizing the bleached oil in a continuous deodorizer at a temperature from 220° C. to 255° C. at a pressure of less than about 1.4 kPa and a residence time of up to 30 minutes to form the oil composition having an anisidine value of less than about 3. 15. A process for maintaining the storage stability of an oil during shipment or storage, the process comprising encapsulating the oil in an encapsulation material; wherein the process for preparing the oil comprises degumming a crude oil under an inert atmosphere to form a degummed oil; contacting the degummed oil with a bleaching material under process conditions that minimize oxidation to form a bleached oil; and deodorizing the bleached oil in a continuous deodorizer at a temperature from 220° C. to 255° C. at a pressure of less than about 1.4 kPa and a residence time of up to 30 minutes to form the oil composition having an anisidine value of less than about 3. 16. The process of claim 15 further comprising the step of stripping the oil of oxygen prior to the storage or encapsulation step. 17. The process of claim 2 wherein the oil is crude oil. 18. The method of claim 1 , wherein the oil has an anisidine value of less than 3 after storage.
