The invention claimed is: 1. A non-foaming composition comprising, in a physiologically acceptable aqueous medium, a compound of formula (I) below: in which: R 1 represents a radical COOR 3 , where R 3 denotes a hydrogen atom or a C 1 -C 4 alkyl radical, which is optionally substituted by one or more hydroxyl groups; R 2 represents a saturated or unsaturated hydrocarbon radical which is linear and has from 1 to 18 carbon atoms or is branched or cyclic and has from 3 to 18 carbon atoms; and also the optical isomers thereof and corresponding salts; and a copolymer of 2-acrylamido-2-methylpropanesulphonic acid and hydroxylated C 2 -C 4 alkyl(meth)acrylate, which is optionally salified. 2. The composition according to claim 1 , wherein the compound (I) is such that R 1 denotes a radical selected from —COOH, —COOMe, —COO—CH 2 —CH 3 , —COO—CH 2 —CH(OH)—CH 2 OH, —COOCH 2 —CH 2 —CH 2 OH, —COOCH 2 —CH(OH)—CH 3 ; and R 2 denotes a saturated or unsaturated linear hydrocarbon radical having from 2 to 6 carbon atoms. 3. The composition according to claim 1 , wherein the compound (I) is 3-hydroxy-2-pentylcyclopentaneacetic acid. 4. The composition according to claim 1 , wherein the compound of formula (I) is present in an amount of from 1% to 10% by weight, relative to the total weight of the composition. 5. The composition according to claim 1 , wherein the copolymer of 2-acrylamido-2-methylpropanesulphonic acid and hydroxylated C 2 -C 4 alkyl(meth)acrylate is salified in the form of a salt selected from alkali metal salts, ammonium salts, amino alcohol salts and amino acid salts. 6. The composition according to claim 1 , wherein the copolymer of 2-acrylamido-2-methylpropanesulphonic acid and hydroxylated C 2 -C 4 alkyl(meth)acrylate is salified in the form of the sodium salt. 7. The composition according to claim 1 , wherein the copolymer of 2-acrylamido-2-methylpropanesulphonic acid and hydroxylated C 2 -C 4 alkyl(meth)acrylate is present in an amount of from 0.1% to 10% by weight, relative to the total weight of the composition. 8. The composition according to claim 1 , wherein it takes the form of an oil-in-water emulsion. 9. A method for non-therapeutic treatment of keratin materials, which comprises applying to said keratin materials a cosmetic composition as defined in claim 1 . 10. The composition according to claim 2 , wherein the compound of formula (I) is present in an amount of from 1% to 10% by weight, relative to the total weight of the composition. 11. The composition according to claim 3 , wherein the compound of formula (I) is present in an amount of from 1% to 10% by weight, relative to the total weight of the composition. 12. The composition according to claim 1 , wherein the compound of formula (I) is present in an amount of from 1.5% to 5% by weight, relative to the total weight of the composition. 13. The composition according to claim 2 , wherein the copolymer of 2-acrylamido-2-methylpropanesulphonic acid and hydroxylated C 1 -C 4 alkyl(meth)acrylate is salified in the form of a salt selected from alkali metal salts, ammonium salts, amino alcohol salts and amino acid salts. 14. The composition according to claim 3 , wherein the copolymer of 2-acrylamido-2-methylpropanesulphonic acid and hydroxylated C 2 -C 4 alkyl(meth)acrylate is salified in the form of a salt selected from alkali metal salts, ammonium salts, amino alcohol salts and amino acid salts. 15. The composition according to claim 4 , wherein the copolymer of 2-acrylamido-2-methylpropanesulphonic acid and hydroxylated C 2 -C 4 alkyl(meth)acrylate is salified in the form of a salt selected from alkali metal salts, ammonium salts, amino alcohol salts and amino acid salts. 16.
