Disclosed are nutritional formulations including predigested fats that can be administered to preterm infants, infants, toddlers, and children for improving tolerance, digestion, and absorption of nutrients and for reducing the incidence of necrotizing enterocolitis, colic, and short bowel syndrome. The predigested fats include fatty acid-containing monoglycerides and/or a fatty acid component.

What is claimed is: 1. A nutritional product comprising a fat system, wherein the fat system comprises at least about 10 wt % of a fatty acid component and at least about 10 wt % of monoglycerol palmitate, wherein at least 70% of palmitic acid residues in the monoglycerol palmitate are at the Sn−1 position, wherein the fatty acid component includes at least one of free fatty acids and fatty acid salts, and the fatty acid component is obtained from a source of oil or fat that contains a total of less than about 20 wt % of palmitic acid, stearic acid, myristic acid, or combinations thereof, and wherein the nutritional product is selected from a liquid emulsion or a powder reconstitutable into a liquid emulsion. 2. The nutritional product of claim 1 , wherein the fat system comprises from about 10 wt % up to about 60 wt % of fatty acid component and from about 10 wt % up to about 60 wt % of monoglycerol palmitate. 3. The nutritional product of claim 1 , wherein the fat system comprises from about 15 wt % to about 25 wt % of fatty acid component and from about 15 wt % to about 25 wt % of monoglycerol palmitate. 4. The nutritional product of claim 1 , wherein the fatty acid component is selected from the group consisting of calcium fatty acid salts, magnesium fatty acid salts, and combinations thereof. 5. The nutritional product of claim 1 , wherein the fatty acid component is obtained from a vegetable oil. 6. The nutritional product of claim 5 , wherein the vegetable oil is selected from the group consisting of olive oil, canola oil, corn oil, soybean oil, high oleic safflower oil, and combinations thereof. 7. The nutritional product of claim 6 , wherein the vegetable oil is soybean oil. 8. The nutritional product of claim 1 , wherein the fatty acid component is obtained from tree resin. 9. The nutritional product of claim 1 , wherein the fatty acid component is fractionated from animal fat. 10. The nutritional product of claim 1 , wherein the fatty acid component is obtained from a source of oil having a total of less than 10 wt % of myristic acid, palmitic acid, stearic acid, or combinations thereof. 11. The nutritional product of claim 1 , wherein the monoglycerol palmitate is obtained by enzymatic hydrolysis of lard, tallow, or combinations thereof. 12. The nutritional product of claim 1 , wherein the nutritional product is free of carrageenan. 13. An infant formula comprising a fat system, wherein the fat system comprises at least about 10 wt % of a fatty acid component and at least about 10 wt % of monoglycerol palmitate, wherein at least 70% of palmitic acid residues in the monoglycerol palmitate are at the Sn−1 position, wherein the fatty acid component includes at least one of free fatty acids and fatty acid salts, and the fatty acid component is obtained from a source of oil or fat that contains a total of less than about 20 wt % of palmitic acid, stearic acid, myristic acid, or combinations thereof. 14. The infant formula of claim 13 , wherein the fat system comprises from about 10 wt % up to about 60 wt % of the fatty acid component and from about 10 wt % up to about 60 wt % of the monoglycerol palmitate. 15. The infant formula of claim 13 , wherein the fat system comprises from about 15 wt % to about 25 wt % of the fatty acid component and from about 15 wt % to about 25 wt % of the monoglycerol palmitate. 16. The infant formula of claim 13 , wherein the fatty acid component is selected from the group consisting of calcium fatty acid salts, magnesium fatty acid salts, and combinations thereof. 17. The infant formula of claim 13 , wherein the fatty acid component is obtained from a vegetable oil. 18. The infant formula of claim 17 , wherein the vegetable oil is selected from the group consisting of olive oil, canola oil, corn oil, soybean oil, high oleic safflower oil, and combinations thereof. 19. The infant formula of claim 18 , wherein the vegetable oil is soybean oil. 20. The infant formula of claim 13 , wherein the fatty acid component is obtained from tree resin. 21. The infant formula of claim 13 , wherein the fatty acid component is obtained from fractionated animal fat. 22. The infant formula of claim 21 , wherein the fatty acid component is obtained from a source of oil having a total of less than 10 wt % of myristic acid, palmitic acid, stearic acid, or combinations thereof. 23. The infant formula of claim 13 , wherein the infant formula is free of carrageenan.
