Sucrose isomerase is used as a nutritional supplement, or can be mixed in with a powderous food/beverage formulation. When an animal, including a human, consumes sucrose, the sucrose isomerase will act on the sucrose present in the food, and will convert the sucrose to other sugars. This results in lowering of the glycemic index of the food without changing the formulation of the food.

1 . A method of lowering the increase of blood glucose levels in an animal, including a human ingesting sucrose, comprising administering a nutraceutical, pharmaceutical or nutritional supplement comprising a sucrose isomerase to the animal including a human in need thereof. 2 . The method according to claim 1 , wherein the nutraceutical, pharmaceutical or nutritional supplement is suitable for administration to humans. 3 . The method according to claim 1 , wherein the nutraceutical, pharmaceutical or nutritional supplement is suitable for administration to animals. 4 . The method according to claim 1 , wherein the sucrose isomerase comprises an amino acid sequence having at least 90% identity to any one of the sequences of SEQ ID NO: 1-6. 5 . The method according to claim 4 , wherein the sucrose isomerase comprises an amino acid sequence having at least 90% identity to any one of the sequences of SEQ ID NO: 4. 6 . A method of lowering the glycemic index of a food or feed which is consumed by a human or companion animal comprising administering to the human or companion animal a nutraceutical, pharmaceutical or nutritional supplement comprising a sucrose isomerase. 7 . The method according to claim 6 , wherein the nutraceutical, pharmaceutical or nutritional supplement is suitable for administration to humans. 8 . The method according to claim 6 , wherein the nutraceutical, pharmaceutical or nutritional supplement is suitable for companion administration to animals. 9 . The method according to claim 6 , wherein the sucrose isomerase comprises an amino acid sequence having at least 90% identity to any one of the sequences of SEQ ID NO: 1-6. 10 . The method according to claim 9 , wherein the sucrose isomerase comprises an amino acid sequence having at least 90% identity to any one of the sequences of SEQ ID NO: 4. 11 . A method of losing weight or maintaining weight loss in a human or companion animal comprising administering to the human or companion animal a nutraceutical, pharmaceutical or nutritional supplement comprising a sucrose isomerase. 12 . The method according to claim 11 , wherein the nutraceutical, pharmaceutical or nutritional supplement is suitable for administration to humans. 13 . The method according to claim 11 , wherein the nutraceutical, pharmaceutical or nutritional supplement is suitable for administration to companion animals. 14 . The method according to claim 11 , wherein the sucrose isomerase comprises an amino acid sequence having at least 90% identity to any one of the sequences of SEQ ID NO: 1-6. 15 . The method according to claim 14 , wherein the sucrose isomerase comprises an amino acid sequence having at least 90% identity to any one of the sequences of SEQ ID NO: 4.
