A disposable air and water (AW) valve assembly and suction valve assembly for an EUS instrument. The AW assembly includes an AW valve and an endcap for receiving the AW valve therebetween. The AW valve includes an AW stem connected to a valve stem. The suction valve assembly includes a suction valve disposed in a suction endcap. The suction valve also includes a valve stem. The valve stem is disposed between a suction valve opening such that portions of the valve stem extend beyond opposed ends of the suction endcap. The suction valve is formed from a suction stem and a piston connected to the suction stem.

We claim: 1 . An endoscopy valve assembly comprising: an endcap having a first endcap opening; a suction valve at least partially disposed between the first endcap opening, wherein the suction valve includes a suction valve opening; and a valve stem at least partially disposed between the suction valve opening such that portions of the valve stem extend beyond opposed ends of the endcap; wherein the suction valve includes a suction stem having an elongated suction stem part that extends from a first side of the suction stem beyond one end of the endcap and a piston connected to a second side of the suction stem opposite the first side; and wherein the suction stem and the piston are each formed of a single piece construction. 2 . The assembly of claim 1 , further comprising a cap configured to cover at least a portion of the valve stem at an end opposite the one end of the endcap. 3 . The assembly of claim 2 , further comprising a biasing member at least partially disposed within the endcap such that portions of the biasing member enclose parts of the valve stem between the cap and the endcap. 4 . The assembly of claim 3 , wherein the biasing member is positioned within the apparatus to guide the spring along portions of the valve stem in operation. 5 . The assembly of claim 1 , wherein at least a portion of the valve stem has an arcuate profile. 6 . The assembly of claim 1 , wherein the piston is connected to the suction stem via a piston clip. 7 . The assembly of claim 6 , wherein the suction stem includes a connection port operable to extend through a wall opening of the endcap and receive the piston clip. 8 . An endoscopic ultrasounds (EUS) instrument comprising: a casing having one or more casing openings configured to at least partially receive one or more valves assemblies therein; and a suction valve assembly according to claim 1 at least partially disposed in a first casing opening. 9 . An endoscopy valve assembly comprising: an endcap having a guide member defining a guide opening extending through the guide member; a first stem having a stem body with a first side, a second side opposite the first side, and a connection port extending from the first side of the body; and a second stem having a body with a first end and a second end, a threaded portion disposed near the first end, and a channel extending into the second end of the body, the body defining an opening extending laterally from an outer surface of the body into the channel and a clocking area disposed near the threaded portion and having a profile corresponding to a shape of the guide opening; and a piston defining an opening and having a connecting means configured to be at least partially received in the connection port; wherein the second stem extends through the opening of the piston and the guide opening of the endcap when the valve assembly is assembled. 10 . The endoscopy valve of claim 9 , wherein the first stem is a single piece construction. 11 . The endoscopy valve of claim 9 , wherein the stem body of the first stem defines an opening configured to receive at least a portion of the second stem therethrough. 12 . The endoscopy valve of claim 9 , further comprising a cap threadingly connected to the threaded portion of the second stem. 13 . The endoscopy valve of claim 9 , wherein the second stem is solid between the channel and the threaded portion. 14 . The assembly of claim 3 , wherein the clocking area has an arcuate profile. 15 . A suction valve for use with an endoscope, the suction valve comprising: an endcap having a guide member defining a guide opening extending through the guide member; a first stem having a connecting port extending from a first side of a body and a distal projection extending from a second side of the body; a second stem having a proximal portion and a distal portion defining a channel, the proximal portion being operably inserted through the guide opening of the guide member, the proximal portion having a cross section along a length of the proximal portion corresponding to a shape of the guide opening; and a piston defining an opening and having a connecting means, the opening being configured to receive a portion of the second stem therethrough and the connecting means being operably connected to the connecting port of the first stem through a wall opening in the endcap. 16 . The suction valve of claim 15 , wherein the cross section of the proximal portion of the second stem is arcuate. 17 . The suction valve of claim 15 , wherein the first stem includes a distal projection extending from the second side of the body. 18 . The suction valve of claim 17 , further comprising a sleeve disposed around the distal projection of the first stem. 19 . The suction valve of claim 15 , wherein the connecting means is a piston clip. 20 . The suction valve of claim 15 , wherein the endcap defines a wall opening configured to at least a partially receive a guide pin of the first stem therethrough.
