The invention provides protein particles having improved whiteness after storage, and powder detergents comprising the particles.

First claim

1 . A particle comprising: (a) a protein; (b) a salt of sulfite, bisulfite, or metabisulfite; and (c) (i) a mono- or disaccharide which is a reducing sugar or can be degraded to a reducing sugar; or (ii) less than 0.5% w/w of titanium dioxide. 2 . The particle of claim 1 , which comprises the mono- or disaccharide in an amount of more than 0.01% w/w. 3 . The particle of claim 1 , which comprises the salt of sulfite, bisulfite, or metabisulfite in an amount of more than 0.01% w/w. 4 . The particle of claim 1 , which comprises the protein in an amount of 0.1-25% w/w. 5 . The particle of claim 1 , wherein the protein is produced by fermentation. 6 . The particle of claim 1 , wherein the protein and the salt of sulfite, bisulfite, or metabisulfite are homogenously mixed in a continuous matrix. 7 . The particle of claim 6 , which comprises a core and a coating, and the core comprises the continuous matrix. 8 . The particle of claim 1 , wherein the protein is an enzyme, and the amount of protein is active enzyme protein. 9 . The particle of claim 1 , wherein the salt of sulfite, bisulfite, or metabisulfite is a salt of metabisulfite. 10 . The particle of claim 1 , which comprises than 0.1% w/w of titanium dioxide. 11 . The particle of claim 1 , which exhibits reduced loss of whiteness after storage. 12 . A method for preparing a particle of claim 1 , comprising (a) preparing a homogenous mixture of a protein produced by fermentation, and a salt of sulfite, bisulfite, or metabisulfite; and (b) preparing a particle from the homogenous mixture. 13 . The method of claim 12 , wherein the protein is recovered from a fermentation liquid comprising a mono- or disaccharide which is a reducing sugar or can be degraded to a reducing sugar. 14 . The method of claim 12 , wherein the fermentation liquid further comprises invertase and/or glucosidase. 15 . A method for improving the whiteness after storage of a protein particle, comprising (a) preparing the particle of claim 1 ; and (b) storing the particle for more than 2 weeks. 16 . A powder detergent comprising a surfactant and a builder, and the particle of claim 1 . 17 . The particle of claim 1 , which comprises (i) a mono- or disaccharide selected from glucose, fructose, lactose, maltose, and sucrose. 18 . The particle of claim 1 , which comprises the mono- or disaccharide in an amount of more than 0.05% w/w. 19 . The particle of claim 1 , which comprises the salt of sulfite, bisulfite, or metabisulfite in an amount of more than 0.05% w/w. 20 . The particle of claim 1 , wherein the fermentation liquid comprises invertase and/or glucosidase.
