The present invention provides the use of a composition obtainable from the pulp of a plant in the theobroma genus or an extract of said pulp, as an ingredient in a foodstuff product.

1 . A process for preparing a foodstuff product comprising the steps of i) blending a food-pieces mix, with a binder, and ii) forming a foodstuff product from said mixture, wherein said binder comprises ingredients derived from pulp from a plant in the theobroma genus and/or an extract of pulp from a plant in the theobroma genus. 2 . The process of claim 1 , wherein the pulp or extract of pulp is cocoa pulp or an extract of cocoa pulp. 3 . The process of either of claim 1 , wherein the food-pieces mix is combined with the binder to provide a composition comprising between 10 wt % and 45 wt % binder by weight of the composition. 4 . The process of claim 1 , wherein the food-pieces mix is combined with the binder to provide a composition comprising between 55 wt % and 90 wt % food piece mix by weight of the composition. 5 . The process of claim 1 , wherein the binder comprises water in an amount of greater than 5% by weight of the binder and in an amount of less than 30% by weight of the binder. 6 . The process of claim 1 , wherein the binder comprises a total solids content of between 70% by weight and 95% by weight of the binder. 7 . The process according to claim 1 , wherein the food-pieces mix comprises-pieces selected from the group consisting of fruit-pieces, nut-pieces, cereal-pieces, chocolate-product-pieces, fish-pieces, meat-pieces, dairy-pieces and vegetable-pieces and mixtures thereof. 8 . The process of claim 1 , wherein the pulp and/or pulp extract has been treated to reduce the polysaccharide content. 9 . The process of claim 8 , wherein the treatment comprises treatment with an enzyme to reduce the polysaccharide content. 10 . The process of claim 8 , wherein the treatment comprises the reduction of the pectin content and/or cellulose content in the pulp or extract of pulp. 11 . The process of claim 10 , wherein treatment comprises treatment with a pectinase and/or a cellulase. 12 . The process of claim 9 , wherein the enzyme treatment is carried out between 20° C. and 75° C. for between 10 minutes and 20 hours. 13 . The process of claim 9 , wherein the pulp or extract of pulp is treated to increase the pH to be greater than pH 3.0. 14 . A foodstuff product as prepared by a process of claim 1 . 15 . A foodstuff product comprising multiple food-pieces bound together with a binder, wherein said binder comprises ingredients derived from pulp from a plant in the theobroma genus and/or an extract of pulp from a plant in the theobroma genus and the binder is present in an amount of between 7 wt % and 45 wt % of the foodstuff product.
