A method of making a bijel includes dispersing surface-active nanoparticles in a ternary liquid mixture. The ternary liquid mixture includes a hydrophilic liquid, a hydrophobic liquid, and a solvent. The ternary liquid mixture is contacted with water. A bijel includes a stable mixture of two immiscible liquids separated by an interfacial layer of colloidal particles. The bijel has temperature-independent stability, and the domain sizes are below one micrometer.

What is claimed: 1 . A bijel, the bijel made according to dispersing surface-active nanoparticles into a monophasic ternary liquid mixture to give rise to a loaded mixture, wherein the monophasic ternary liquid mixture comprises a hydrophilic liquid, a hydrophobic liquid, and a solvent, contacting the ternary liquid mixture with water, wherein the surface-active nanoparticles are wettable equally well by the hydrophilic liquid and the hydrophobic liquid; and contacting the loaded mixture with water so as to initiate phase separation through spinodal decomposition and induce mass transfer of the solvent and give rise to the bijel. 2 . A fiber scaffold for tissue engineering, comprising the bijel of claim 1 . 3 . A cosmetic composition, comprising the bijel of claim 1 . 4 . A food composition, comprising the bijel of claim 1 . 5 . A filter comprising the bijel of claim 1 . 6 . A fog harvesting mesh comprising the bijel of claim 1 A cross-flow reactor comprising the bijel of claim 1 . 8 . A bijel comprising: a stable mixture of two immiscible liquids separated by an interfacial layer of colloidal particles, wherein the bijel has temperature-independent stability, and wherein the bijel has domain sizes of below one micrometer. 9 . The bijel of claim 8 , wherein the bijel is a bijel fiber or a bijel membrane. 10 . The bijel of claim 8 , wherein one of the immiscible liquids is a hydrophilic liquid and the other of the immiscible liquids is a hydrophobic liquid. 11 . The bijel of claim 10 , wherein the colloidal particles comprise surface-active nanoparticles are wettable equally well by the hydrophilic liquid and the hydrophobic liquid. 12 . The bijel of claim 10 , wherein at least one of the hydrophilic liquid and the hydrophobic liquid comprises a polymer. 13 . The bijel of claim 8 , wherein the domain sizes are between 1 micrometer and 300 nm. 14 . The bijel of claim 13 , wherein the domain sizes are between 1 micrometer and 500 nm. 15 . The bijel of claim 8 , wherein the hydrophobic liquid is an oil. 16 . The bijel of claim 8 , wherein the hydrophilic liquid is water. 17 . The bijel of claim 8 , wherein the bijel further comprises a solvent. 18 . The bijel of claim 17 , wherein the solvent is an alcohol. 19 . The bijel of claim 8 , wherein the bijel is in the form of a fiber. 20 . The bijel of claim 8 , wherein the bijel is in the form of a membrane.
