An on-demand filter structure including a first hydrophilic protective layer comprising a first surface exposable to a stream of water. A contact area on the first surface receives the stream. The first hydrophilic protective layer receives the stream and distributes water out a second surface, primarily using gravity. An activated carbon felt (ACF) layer is adjacent to the second surface, wherein the ACF layer is configured for water filtration, primarily using gravity. A second hydrophilic protective layer includes a third surface adjacent the ACF layer and a fourth surface. The third surface receives filtered water from the ACF layer, and the fourth surface expels the filtered water primarily using gravity, wherein the first and second hydrophilic protective layers sandwich the ACF layer. A cross section of the first hydrophilic protective layer, the ACF layer, and the second hydrophilic protective layer has a curvature.

What is claimed is: 1 . A water bottle with a filter structure, comprising: a portable water bottle having a support structure and a reservoir; and a filter assembly configured to be supported by the support structure, including: a first hydrophilic protective layer having a first surface and a second surface, wherein the first surface is opposed to the second surface, a second hydrophilic protective layer having a third surface and a fourth surface, wherein the third surface is opposed to the fourth surface, and a single activated carbon felt (ACF) layer having a fifth surface and a sixth surface, wherein the ACF layer is disposed between the first hydrophilic protective layer and the second hydrophilic protective layer, wherein the fifth surface of the ACF layer contacts the second surface of the first hydrophilic protective layer and the sixth surface of the ACF layer contacts the third surface of the second hydrophilic protective layer; wherein the filter assembly is formed with the ACF layer sandwiched between the first hydrophilic protective layer and the second hydrophilic protective layer. 2 . The water bottle with the filter structure of claim 1 , wherein the support structure includes a first opening and a second opening. 3 . The water bottle with the filter structure of claim 2 , wherein the filter assembly is in a flow path of the first opening. 4 . The water bottle with the filter structure of claim 2 , wherein the first opening is configured to allow chuggable drinking. 5 . The water bottle with the filter structure of claim 1 , wherein the first hydrophilic protective layer and the second hydrophilic protective layer are both formed as distinct layers operable to be positioned relative to the ACF layer. 6 . The water bottle with the filter structure of claim 1 , wherein the third surface of the second hydrophilic protective layer receives filtered water from the ACF layer; wherein the fourth surface of the second hydrophilic protective layer expels the filtered water from the second hydrophilic protective layer primarily using gravity. 7 . The water bottle with the filter structure of claim 1 , wherein a bending modulus of the ACF layer allows the ACF layer to hold a selected shape of the ACF layer. 8 . The water bottle with the filter structure of claim 4 , wherein the selected shape includes a curved surface that is presented to an incoming stream of water for filtration. 9 . A water bottle with a filter structure, comprising: a portable water bottle having a support structure and a reservoir; and a filter assembly configured to be supported by the support structure, including: a hydrophilic protective layer having a first surface and a second surface, wherein the first surface is opposed to the second surface, and an activated carbon felt (ACF) layer having a third surface and a fourth surface, wherein the ACF layer is disposed in contact with the first hydrophilic protective layer wherein the third surface of the ACF layer contacts the second surface of the first hydrophilic protective layer; wherein the filter assembly is formed with the ACF layer contacting the first hydrophilic protective layer; wherein the filter assembly is configured to provide substantially immediately filter drinkable water. 10 . The water bottle of claim 9 , wherein the filter assembly further comprises: wherein the hydrophilic protective layer includes a first hydrophilic protective layer and a second hydrophilic protective layer, wherein the first hydrophilic protective layer includes the first surface and the second surface, wherein the second hydrophilic protective layer having a fifth surface and a sixth surface, wherein the fifth surface is opposed to the sixth surface, wherein the fourth surface of the ACF layer contacts the fifth surface of the second hydrophilic protective layer; wherein the ACF layer is sandwiched between the first hydrophilic layer and the second hydrophilic layer. 11 . The water bottle of claim 9 , wherein the first hydrophilic protective layer and the second hydrophilic protective layer both comprise a cellulose based nonwoven layer. 12 . The water bottle of claim 11 , wherein the first hydrophilic protective layer and the second hydrophilic protective layer both comprise rayon. 13 . The water bottle of claim 9 , wherein the first hydrophilic protective layer is configured to facilitate an expanded distribution of water out an exit area at the second surface of the first hydrophilic protective layer, wherein the first hydrophilic protective layer acts as a distributor network for the water such that as the water passes through the first hydrophilic protective layer an exit footprint has a larger two-dimensional surface area than an entry footprint. 14 . The water bottle of claim 9 , wherein the support structure includes a first opening. 15 . The water bottle of claim 14 , wherein the first opening is configured to allow chuggable drinking from the portable water bottle. 16 . The water bottle of claim 10 , wherein both the first protective layer and the second protective layer protect prevent a plurality of flakes from the activated carbon felt layer from entering a fluid passed through the filter assembly. 17 . A method of filtering water to or from a water bottle with a filter structure, comprising: providing a filter assembly including a first hydrophilic protective layer having a first surface and an opposed second surface, an activated carbon felt layer having a third surface and an opposed fourth surface, wherein the second surface is adjacent the third surface, and a second hydrophilic protective layer having a fifth surface and an opposed sixth surface, wherein the fifth surface is adjacent the fourth surface that is rolled together such that the activated carbon felt layer positioned between the first hydrophilic protective layer and the second hydrophilic protective layer to form the filter structure; and configuring the filter assembly for positioning in a portable water bottle having a support structure. 18 . The method of claim 17 , further comprising: supporting the provided filter assembly with the support structure within the portable water bottle. 19 . The method of claim 18 , further comprising: connecting the filter assembly relative to a first opening in the support structure such that water is operable to pass the filter assembly from the first opening. 20 . The method of claim 21 , further comprising: preventing a plurality of flakes from the activated carbon felt layer from entering or exiting water into or out of the portable water bottle.
