The present invention relates to recombinant cells, particularly recombinant plant cells, which are capable of producing dihydrosterculic acid and/or derivatives thereof. The present invention also relates to methods of producing oil comprising dihydrosterculic acid and/or derivatives thereof.

A recombinant plant cell comprising DHS, and/or a fatty acid derivative thereof, the DHS or fatty acid derivative thereof being esterified in triacylglycerols in the cells, wherein at least 7% (mol %) of the total fatty acid in extractable oil in the cell is DHS and/or a fatty acid derivative thereof, wherein the recombinant plant cell is a leaf cell. 42 . The recombinant plant cell of claim 41 , wherein at least 7% (mol %) of the total fatty acid in extractable oil in the cell is DHS. 43 . The recombinant plant cell of claim 41 , wherein at least 10% (mol %) of the total fatty acid in extractable oil in the cell is DHS and/or a fatty acid derivative thereof. 44 . The recombinant plant cell of claim 41 , wherein i) the fatty acid derivative comprises a cyclo-propyl group or is a branched chain fatty acid having a methyl group as the branch, and/or ii) the derivative comprises 2, 4 or 6 more carbons in the acyl chain when compared to DHS. 45 . The recombinant plant cell of claim 44 , wherein the fatty acid derivative comprising a cyclo-propyl group or a methyl group is isostearic acid with the methyl group attached to C9 or C10. 46 . The recombinant plant cell of claim 41 , wherein the extractable oil in the cell has a ratio of oleic acid to DHS and/or fatty acid derivative thereof in its total fatty acid content of less than 2:1. 47 . The recombinant plant cell of claim 46 , wherein the ratio of oleic acid to DHS and/or fatty acid derivative thereof is less than 1.5:1. 48 . The recombinant plant cell of claim 41 , wherein less than 10% (mold) sterculic acid and/or malvalic acid is present in the extractable oil in the cell. 49 . The recombinant plant cell of claim 41 , wherein the fatty acid derivative is elongated DHS (eDHS).
