Formulation choices and/or process parameters can be used to modify the texture of extrusion cooked food products. Interactions between formulation choices and process parameters may be used in concert to produce extrusion cooked food products of low density and low hardness. Low density and low harness may make the kibble texture easier or more pleasant to chew or swallow.

What is claimed is: 1 . A process for extrusion cooking a kibble having a gelatinized starch matrix, the process comprising: providing or forming a dough comprising at least 4% type C starch, as a weight percentage of the dough; pre-conditioning the dough at a moisture level of 19-35%; extruding the dough at a moisture content of 19-35%; and drying the extruded dough to form a kibble having a moisture content less than 10%. 2 . The process of claim 1 , wherein the SME during extrusion is between 15 and 40 W·h/kg. 3 . The process of claim 2 , wherein the kibble is dried under heat. 4 . The process of claim 2 , wherein the kibble is dried to moisture level between 1% and 8%. 5 . The process of claim 4 , wherein the kibble is dried to a moisture level between 1% and 5%. 6 . The process of claim 2 , wherein the dough comprises less than 3% free fats.
