The present invention provides a seaweed-based powder. The seaweed-based powder of the present invention has the advantage that it does not deleteriously impact, or it impacts to a lesser extent, the desired colour of a product containing thereof. In addition, the seaweed-based powder of the present invention has the capacity to produce gels having an optimum strength for the intended application. In particular, the invention provides a seaweed-based powder having an aerated bulk density (ABD) of at least 0.20 and a CIELAB L* value of at least 70.

First claim

The invention claimed is: 1. A seaweed powder having an aerated bulk density (ABD) of at least 0.20 g/ml and a CIELAB L* value of at least 70, wherein the seaweed powder is essentially free of oxidizing or bleaching agents. 2. The powder of claim 1 , wherein said powder is a naturally processed powder. 3. The powder of claim 1 , wherein the seaweed is a red, a green, or a brown seaweed. 4. The powder of claim 1 , wherein the seaweed is a red seaweed. 5. The powder of claim 1 , wherein the ABD is at least 0.25. 6. The powder of claim 1 , wherein the CIELAB L* value is at least 72. 7. The powder of claim 1 , wherein the powder has a CIELAB a* value of at most 5.0. 8. The powder of claim 1 , wherein the powder has a storage modulus (G′) of at least 10 Pa as determined in an aqueous medium containing 0.3 wt % of the powder relative to the total weight of the aqueous medium. 9. The powder of claim 1 , wherein the powder is not bleached with alkaline bases, oxidizing or bleaching agents, alcohols or combinations thereof. 10. The powder of claim 1 , wherein the powder is free of any whitening pigment. 11. The powder of claim 1 , wherein the ABD is at least 0.40. 12. The powder of claim 1 , wherein the CIELAB L value is at least 76. 13. The powder of claim 1 , wherein the CIELAB L* value is at least 78. 14. The powder of claim 1 , wherein the seaweed is a non-extracted seaweed. 15. The powder of claim 1 , wherein the seaweed comprises polysaccharides in an amount that is at least 70% of the naturally occurring amount of polysaccharides in the seaweed. 16. A composition comprising: a seaweed powder having an aerated bulk density (ABD) of at least 0.20 g/ml and a CIELAB L* value of at least 70, wherein the seaweed powder is essentially free of oxidizing or bleaching agents; and a gum, wherein the gum is selected from the group consisting of guar gum, xanthan gum, locust bean gum, cassia gum, tara gum, konjac gum, alginate, agar, carrageenan, beta 1,3 glucans, starch, and combinations thereof. 17. A food or feed product comprising the powder of claim 1 or the composition of claim 16 . 18. The food product of claim 17 , wherein said product is selected from the group consisting of bakery products, convenience products, beverage products, dairy products, confectionary products, frozen products, savoury products, meat products, dipping products, egg-based products, fat-spread products, seafood-based products, snack food products, and ready made meals and foods. 19. An industrial product comprising the seaweed powder of claim 1 or the composition of claim 16 .
