A food processing attachment for a food processing device includes a rotational adapter configured to be selectively coupled with a drive system of the food processing device. A food holder is coupled to the rotational adapter and having a base, wherein the food holder is selectively rotated by the rotational adapter. A central spear extends perpendicularly from a center of the base. A plurality of radial flanges extend perpendicularly from the base, wherein each radial flange of the plurality of flanges is discontinuous with the other radial flanges, wherein the central spear and the plurality of radial flanges are adapted to secure a food item in a processing space and in communication with the rotational adapter. A blade is coupled to an operable carriage and is adapted to selectively engage the food item within the processing space to remove at least a portion of the food item.

What is claimed is: 1. A food processing attachment for a food processing device, the food processing attachment comprising: a rotational adapter that is positioned within a frame; a food holder positioned relative to the frame and selectively rotated by the rotational adapter to define a processing space; and an operable carriage that is configured to receive a blade, the operable carriage adapted to selectively move through the processing space defined proximate the food holder, the operable carriage being biased toward the processing space, wherein the operable carriage is operable between a rest position distal from the processing space, a cutting position defined by the operable carriage moving into the processing space, and a stopping position defined by the operable carriage engaging a portion of the frame, wherein the stopping position prevents further advancing movement of the operable carriage through the processing space, wherein the operable carriage is guided along a linear path between the rest position, the cutting position, and the stopping position by a linear guide, the linear guide adapted to prevent movement distal from the linear path of the operable carriage; and the linear guide includes at least one guide shaft that extends through a corresponding aperture defined within the operable carriage. 2. The food processing attachment of claim 1 , wherein the linear guide includes a plurality of guide shafts that extend through corresponding apertures in the operable carriage. 3. The food processing attachment of claim 2 , wherein the plurality of guide shafts includes three guide shafts. 4. The food processing attachment of claim 2 , wherein the at least one guide shaft of the plurality of guide shafts includes a biasing mechanism that exerts a biasing force that biases the operable carriage toward the processing space. 5. The food processing attachment of claim 4 , wherein the biasing mechanism is a low-rate spring that is disposed on one guide shaft of the plurality of guide shafts. 6. The food processing attachment of claim 1 , wherein the operable carriage is configured to receive a removable cartridge that includes the blade. 7. A food processing attachment for a food processing device, the food processing attachment comprising: a rotational adapter; a food holder selectively rotated by the rotational adapter to define a processing space; a plurality of radial flanges extending perpendicularly from the food holder; and an operable carriage that is configured to receive a blade, the operable carriage is adapted to selectively move through the processing space defined proximate the food holder, the operable carriage being biased toward the processing space, wherein the operable carriage is operable through a plurality of positions relative to the food holder wherein: the operable carriage is guided along a linear path between the plurality of positions by a linear guide, the linear guide adapted to prevent movement distal from the linear path of the operable carriage; and the linear guide includes at least one guide shaft that extends through a corresponding aperture defined within the operable carriage. 8. The food processing attachment of claim 7 , wherein the plurality of positions include a rest position distal from the processing space, an initial cutting position defined by the operable carriage moving toward the processing space, and a stopping position defined by the operable carriage engaging a portion of the food holder, wherein the stopping position prevents further movement of the operable carriage through the processing space. 9. The food processing attachment of claim 7 , wherein each radial flange of the plurality of radial flanges being discontinuous with other radial flanges of the plurality of radial flanges. 10. The food processing attachment of claim 7 , wherein the rotational adapter is axially fixed with respect to the linear guide. 11. The food processing attachment of claim 7 , wherein the linear guide includes a plurality of guide shafts that extend through corresponding apertures in the operable carriage. 12. The food processing attachment of claim 11 , wherein the plurality of guide shafts includes three guide shafts. 13. The food processing attachment of claim 7 , wherein a biasing mechanism of the operable carriage exerts a biasing force that biases the operable carriage toward the processing space. 14. The food processing attachment of claim 13 , wherein the biasing mechanism is a low-rate spring. 15. The food processing attachment of claim 7 , wherein the operable carriage includes a cartridge receptacle that is configured to selectively receive a removable cartridge that includes the blade. 16. A food processing attachment for a food processing device, the food processing attachment comprising: a rotational adapter positioned within a frame; a food holder positioned relative to the frame and selectively rotated by the rotational adapter to define a processing space; and an operable carriage slidably coupled to the frame and including a cartridge receptacle that is configured to selectively receive a removable blade cartridge, wherein the cartridge receptacle is adapted to selectively move toward the processing space defined proximate the food holder; the cartridge receptacle being biased by the operable carriage toward the processing space and through a plurality of positions relative to the food holder; and the cartridge receptacle is guided along a linear path and through the plurality of positions by a linear guide, the linear guide adapted to prevent movement distal from the linear path of the operable carriage; and the linear guide includes at least one guide shaft that extends through a corresponding aperture defined within the operable carriage. 17. The food processing attachment of claim 16 , wherein the cartridge receptacle is operable between a rest position distal from the processing space, a cutting position defined by the cartridge receptacle moving toward the processing space, and a stopping position defined by the operable carriage engaging a portion of the frame. 18. The food processing attachment of claim 17 , wherein the stopping position prevents further advancing movement of the cartridge receptacle through the processing space. 19. The food processing attachment of claim 16 , wherein a biasing mechanism of the operable carriage exerts a biasing force that biases the cartridge receptacle toward the processing space. 20. The food processing attachment of claim 19 , wherein the biasing mechanism is a low-rate spring.
