We claim: 1. A propulsion system comprising: a propulsor; a turbomachine operable to drive the propulsor to generate thrust during operation; a fuel cell assembly configured to add power to the propulsor, the turbomachine, or both; and a multi-gas sensor comprising multiple sensing elements operable with the fuel cell assembly, for sensing gas composition data of a flow of output products from an outlet of the fuel cell assembly, the gas composition data comprising data indicative of at least two gases and their concentrations, wherein each sensing element of the multiple sensing elements comprises a sensing film operable within an environment, wherein each sensing element of the multiple sensing elements further comprises a substrate, one or more sensing electrodes, and a corresponding one or more heating elements, wherein the sensing film and the one or more sensing electrodes are positioned on a first side of the substrate, and wherein the one or more heating elements are positioned on an opposite, second side of the substrate, wherein each of the sensing elements are disposed within a single housing; wherein the multiple sensing elements are positioned downstream from the fuel cell assembly outlet, the environment defining a temperature of at least 400 degrees Celsius and up to 1000 degrees Celsius during a normal operating condition of the propulsion system. 2. The propulsion system of claim 1 , wherein the turbomachine comprises a combustion section having a combustor, wherein the fuel cell assembly outlet is positioned to direct to the output products from the fuel cell assembly into the combustor. 3. The propulsion system of claim 2 , wherein the multiple sensing elements are disposed within the combustor downstream from the fuel cell assembly outlet. 4. The propulsion system of claim 1 , wherein the fuel cell assembly comprises a fuel processing unit, and wherein the fuel processing unit provides a flow of fuel to the fuel cell assembly. 5. The propulsion system of claim 4 , wherein the fuel cell assembly further includes a fuel cell stack having a fuel cell, wherein the flow of fuel from the fuel processing unit flow is provided to the fuel cell. 6. The propulsion system of claim 1 , wherein the fuel cell assembly comprises a fuel cell stack and an enclosure at least partially enclosing the fuel cell stack, wherein the enclosure is configured to receive a flow of air. 7. The propulsion system of claim 1 , further comprising: a fuel delivery assembly, wherein the turbomachine comprises a combustion section having a combustor, wherein the fuel delivery assembly is configured to provide a fuel flow to the combustion section. 8. The propulsion system of claim 1 , wherein the propulsion system is an aeronautical propulsion system, and wherein the multi-gas sensor is configured to sense the gas composition data of the output products from the fuel cell assembly during a flight operation of the propulsion system. 9. The propulsion system of claim 1 , wherein the at least two gases and their concentrations include two or more of the following: H 2 , CO, CO 2 , CH 4 , H 2 O, N 2 , NH 3 , non-volatile particulate matter, and volatile particulate matter. 10. The propulsion system of claim 1 , wherein the multi-gas sensor weighs less than about 50 grams and has a size less than less than about 20 mm in length by less than about 20 mm in width by less than about 20 mm in thickness. 11. The propulsion system of claim 1 , wherein the sensing film of each sensing element is at least one of a metal oxide material, a composite material, semiconducting materials, n-type semiconducting materials, p-type semiconducting materials, a combination of n-type and p-type semiconducting materials, nanocomposite materials, or inorganic materials. 12. The propulsion system of claim 1 , wherein each of the sensing elements are connected to a modifier assembly further including a multiplexer.
