A dip tank and recycling system for applying antimicrobial solution to food items, including a dip tank having a bottom and sides, and holding a liquid antimicrobial solution. A conveyor to convey food items through the tank passes through the liquid antimicrobial solution held in the tank such that food items conveyed on the conveyor are dipped in the liquid antimicrobial solution. At least two discharge nozzles spray fresh antimicrobial solution into the tank. The discharge nozzles are located in the sides of the tank, and are positioned above the level of the conveyor but below an expected top level of the liquid antimicrobial solution contained within the tank such that food items conveyed on the conveyor are agitated by the force of the spray from the discharge nozzles. The spray from the discharge nozzles causes unstacking of items on the conveyor, producing an even application of the antimicrobial solution.

What is claimed is: 1. A suction box for withdrawing a liquid from a tank, the suction box comprising: a bottom and at least three side walls and being at least partially open at a fourth side for attachment to an aperture located in a side wall of a tank, wherein at least one of the side walls of the suction box has a first height; a filter screen in the at least partially open fourth side for at least partially covering the aperture in the side wall of the tank, the filter screen having a second height, wherein the first height is greater than the second height; a drain opening in fluid communication with a pump for withdrawing liquid therethrough; and a sensor for measuring a level of the liquid in the tank. 2. The suction box according to claim 1 , wherein the filter screen comprises a plurality of rods. 3. The suction box according to claim 2 , wherein the plurality of rods have a circular cross-section. 4. The suction box according to claim 1 , wherein the filter screen does not extend to a top of the aperture located in the side wall of the tank. 5. The suction box according to claim 1 , wherein the sensor is a pressure transducer located in the bottom of the suction box. 6. The suction box according to claim 1 , wherein the aperture located in the side wall of the tank has a third height; and wherein the third height is greater than the second height. 7. The suction box according to claim 1 , wherein the drain opening in fluid communication with the pump for withdrawing liquid therethrough is located in the bottom. 8. The suction box according to claim 1 , wherein the drain opening in fluid communication with the pump for withdrawing liquid therethrough is located in one of the at least three side walls. 9. A suction system for withdrawing a liquid from a tank comprising: a suction box, comprising: a bottom wall; at least three side walls extending from the bottom wall and being at least partially open at a fourth side; a filter screen covering at least a portion of an aperture located in a wall of the tank, wherein the filter screen does not extend to a top of the aperture; one or more drain holes through the bottom wall, at least one of the side walls, or a combination thereof; and wherein the suction box is engaged with and in fluid communication with the tank. 10. The suction system according to claim 9 , wherein the suction box further comprises a sensor for measuring a level of a liquid in the tank. 11. The suction system according to claim 10 , wherein the sensor is a pressure transducer located in the bottom wall of the suction box. 12. The suction system according to claim 9 , wherein at least one side wall of the suction box has a first height; wherein the filter screen has a second height; and wherein the first height is greater than the second height. 13. The suction system according to claim 9 , wherein the filter screen comprises a plurality of rods and wherein the plurality of rods have a circular cross-section. 14. A suction box comprising: three side walls representing a first side, second side, and a third side, respectively; wherein the first side and the third side are opposing; wherein the second side opposes a fourth side; and wherein the fourth side is at least partially open; a bottom wall, wherein the three side walls extend from the bottom wall; one or more drain holes through the bottom wall; a sensor for measuring a level of liquid in a tank; and a filter screen; wherein the filter screen forms a portion of the fourth side; and wherein the filter screen is a plurality of round bars; and wherein the suction box is attached to a first wall of a tank; wherein the first wall of the tank includes an aperture; wherein the fourth side is adjacent to the aperture; and wherein the aperture located in the first wall of the tank has a first height; wherein the filter screen has a second height; and wherein the first height is greater than the second height.
