What is claimed is: 1. A staple cartridge assembly for use with a surgical stapler, comprising: a cartridge body having a plurality of staple cavities and a plurality of staples, each staple being disposed within one of the plurality of staple cavities and configured to be deployed into tissue; and a mixture disposed on at least a portion of the outer surface of the plurality of staple cavities and on at least a portion of the outer surface of the plurality of staples, the mixture comprising at least one matrix metalloproteinase (MMP) inhibitor and an adhesion coating comprising an absorbable polymer and an absorbable lubricant, the adhesion coating being configured to adhere the at least one MMP inhibitor to the outer surface, and the mixture being configured to be released from the outer surface upon deployment of the plurality of staples into tissue. 2. The staple cartridge assembly of claim 1 , wherein the absorbable polymer and the at least one MMP inhibitor are combined together to thereby result in an absorbable polymer/MMP inhibitor blend. 3. The staple cartridge assembly of claim 2 , wherein the absorbable polymer/MMP inhibitor blend is combined with the absorbable lubricant to form the mixture. 4. The staple cartridge assembly of claim 1 , wherein the cartridge body, with the plurality of staples therein, is dipped into the mixture. 5. The staple cartridge assembly of claim 1 , wherein the absorbable polymer comprises one or more non-synthetic materials. 6. The staple cartridge assembly of claim 5 , wherein the one or more non-synthetic materials are selected from the group consisting of lyophilized polysaccharide, glycoprotein, bovine pericardium, collagen, gelatin, fibrin, fibrinogen, elastin, proteoglycan, keratin, albumin, hydroxyethyl cellulose, cellulose, oxidized cellulose, oxidized regenerated cellulose (ORC), hydroxypropyl cellulose, carboxyethyl cellulose, carboxymethylcellulose, chitan, chitosan, casein, alginate, and combinations thereof. 7. The staple cartridge assembly of claim 1 , wherein the absorbable polymer comprises one or more synthetic materials. 8. The staple cartridge assembly of claim 7 , wherein the one or more synthetic materials are selected from the group consisting of poly(lactic acid) (PLA), poly(L-lactic acid) (PLLA), polycaprolactone (PCL), polyglycolic acid (PGA), poly(trimethylene carbonate) (TMC), polyethylene terephthalate (PET), polyhydroxyalkanoate (PHA), a copolymer of glycolide and ε-caprolactone (PGCL), a copolymer of glycolide and -trimethylene carbonate, poly(glycerol sebacate) (PGS), poly(dioxanone) (PDS), polyesters, poly(orthoesters), polyoxaesters, polyetheresters, polycarbonates, polyamide esters, polyanhydrides, polysaccharides, poly(ester-amides), tyrosine-based polyarylates, polyamines, tyrosine-based polyiminocarbonates, tyrosine-based polycarbonates, poly(D,L-lactide-urethane), poly(hydroxybutyrate), poly(B-hydroxybutyrate), poly(.epsilon.-caprolactone), polyethyleneglycol (PEG), poly[bis(carboxylatophenoxy)phosphazene]poly(amino acids), pseudo-poly(amino acids), absorbable polyurethanes, poly(phosphazine), polyphosphazenes, polyalkyleneoxides, polyacrylamides, polyhydroxyethylmethylacrylate, polyvinylpyrrolidone, polyvinyl alcohols, poly(caprolactone), polyacrylic acid, polyacetate, polypropylene, aliphatic polyesters, glycerols, copoly(ether-esters), polyalkylene oxalates, polyamides, poly(iminocarbonates), polyalkylene oxalates, and combinations thereof. 9. The staple cartridge assembly of claim 8 , wherein the polyester is selected from the group consisting of polylactides, polyglycolides, trimethylene carbonates, polydioxanones, polycaprolactones, polybutesters, and combinations thereof. 10. The staple cartridge assembly of claim 1 , wherein the absorbable polymer is water soluble. 11. The staple cartridge assembly of claim 1 , wherein the absorbable polymer is ionically charged. 12. The staple cartridge assembly of claim 1 , wherein the at least one MMP inhibitor is absorbed into or encapsulated within the absorbable polymer. 13. The staple cartridge assembly of claim 1 , wherein the absorbable lubricant comprises one or more tablet water insoluble lubricants. 14. The staple cartridge assembly of claim 13 , wherein the one or more tablet water insoluble lubricants are selected from the group consisting of magnesium stearate, sodium stearate, calcium stearate, powdered stearic acid, talc, paraffin, cocoa butter, graphite, lycopodium or combinations thereof. 15.
