Sweetener compositions or sweetened compositions (such as beverages or beverage products) containing siamenoside I are provided herein, as well as methods of preparing the same. Methods of improving the flavor and/or temporal profile of sweetenable compositions, such as beverages, are also provided.

The invention claimed is: 1. A zero-calorie, non-carbonated beverage comprising (i) a liquid matrix comprising citric acid, (ii) siamenoside I that is at least about 80% pure in an amount from about 300 ppm to about 400 ppm, and (iii) rebaudioside M that is at least about 90% pure, wherein the ratio of siamenoside I to rebaudioside M is about 3:1 and the beverage does not comprise a rare sugar. 2. The beverage of claim 1 , wherein the beverage does not contain a mogroside other than siamenoside I. 3. The beverage of claim 1 , wherein the beverage further comprises glycosylated steviol glycosides. 4. The beverage of claim 1 , wherein the beverage further comprises one or more sugar alcohols. 5. The beverage of claim 4 , wherein the one or more sugar alcohols is selected from erythritol, sorbitol and mannitol. 6. The beverage of claim 1 , wherein the siamenoside I is present in an amount effective to provide a sweetness equivalence of at least about 5 degrees Brix of sucrose. 7. The beverage of claim 1 , wherein the beverage has a sweetness intensity equivalent to 10 Brix. 8. The beverage of claim 1 , further comprising one or more organic acid additive selected from the group consisting of a C2-C30 carboxylic acid, substituted hydroxyl C2-C30 carboxylic acid, benzoic acid, substituted benzoic acid, substituted cinnamic acid, hydroxyacid, substituted hydroxybenzoic acid, anisic acid substituted cyclohexyl carboxylic acid, tannic acid, aconitic acid, lactic acid, tartaric acid, isocitric acid, gluconic acid, glucoheptanoic acid, adipic acid, hydroxycitric acid, malic acid, fruitaric acid, fumaric acid, maleic acid, succinic acid, chlorogenic acid, salicylic acid, creatine, caffeic acid, bile acid, acetic acid, ascorbic acid, alginic acid, erythorbic acid, polyglutamic acid, gluocono delta lactone, and alkali or alkaline earth metal salts thereof. 9. The beverage of claim 1 , further comprising one or more organic acid additive selected from the group consisting of a sodium, calcium, potassium or magnesium salt of citric acid, malic acid, tartaric acid, fumaric acid, lactic acid, alginic acid, ascorbic acid, benzoic acid, sorbic acid and adipic acid. 10. The beverage of claim 9 , wherein the one or more organic acid additive is present in an amount from about 10 ppm to about 5,000 ppm. 11. The beverage of claim 1 , wherein the non-carbonated beverage is selected from the group consisting of a fruit juice, fruit-flavored juice, juice drink, nectar, vegetable juice, vegetable-flavored juice, sports drink, energy drink, enhanced water drink, near water drink, coconut water, tea type drink, coffee, cocoa drink, beverage containing milk components, beverage containing cereal extracts, and smoothie.
