Compositions comprising oxidized dextran compounds are disclosed herein. Oxidized dextran compounds are produced by contacting dextran under aqueous conditions with at least one N-oxoammonium salt, at least one periodate compound, and/or at least one peroxide compound.

What is claimed is: 1. A composition comprising an oxidized dextran compound, wherein the oxidized dextran compound is produced by contacting dextran under aqueous conditions with at least one N-oxoammonium salt, at least one periodate compound, and/or at least one peroxide compound, wherein the dextran is a product of an isolated glucosyltransferase enzyme comprising an amino acid sequence selected from one with at least 90% identity to SEQ ID NO:1 or SEQ ID NO:2. 2. The composition of claim 1 , wherein the dextran is contacted with the periodate compound. 3. The composition of claim 1 , wherein the dextran is first contacted with the periodate compound, and then contacted with the N-oxoammonium salt. 4. The composition of claim 1 , wherein the N-oxoammonium salt comprises a TEMPO oxoammonium salt. 5. The composition of claim 1 , wherein the composition is a personal care product, industrial product, pharmaceutical product, or food product. 6. The composition of claim 1 , wherein the composition is a household product. 7. The composition of claim 1 , wherein the composition is a detergent composition. 8. The composition of claim 1 , wherein the composition is a fabric care product. 9. The composition of claim 1 , wherein the composition is a dishwashing detergent composition. 10. The composition of claim 9 , wherein the dishwashing detergent composition is an automatic dishwashing detergent composition. 11. The composition of claim 9 , wherein the dishwashing detergent composition is a hand washing dish detergent composition. 12. The composition of claim 1 , wherein the isolated glucosyltransferase enzyme comprises an amino acid sequence selected from one with at least 95% identity to SEQ ID NO:1 or SEQ ID NO:2. 13. The composition of claim 1 , wherein the composition is an aqueous composition. 14. A method of treating a material, said method comprising: contacting the material with a composition according to claim 13 . 15. The method of claim 14 , wherein the material comprises fabric. 16. The method of claim 15 , wherein the fabric comprises (i) natural fiber, (ii) synthetic fiber, or a combination of both (i) and (ii). 17. The method of claim 14 , wherein the material is a pot, pan, baking dish, or tableware. 18. The method of claim 17 , wherein the material is tableware selected from the group consisting of dishes, glasses, utensils, and flatware, wherein the flatware is made from ceramic material, china, metal, glass, or plastic. 19. A method of producing an oxidized dextran compound, the method comprising: contacting dextran under aqueous conditions with at least one N-oxoammonium salt, at least one periodate compound, and/or at least one peroxide compound, wherein the dextran is a product of an isolated glucosyltransferase enzyme comprising an amino acid sequence selected from one with at least 90% identity to SEQ ID NO:1 or SEQ ID NO:2; wherein the dextran is oxidized by the N-oxoammonium salt, periodate compound, and/or peroxide compound thereby producing the oxidized dextran compound. 20. A method of increasing the builder capacity and/or anti-redeposition capacity of an aqueous composition, wherein the method comprises: contacting an oxidized dextran compound according to claim 1 with the aqueous composition, wherein the builder and/or anti-redeposition capacity of the aqueous composition is increased by the oxidized dextran compound compared to the builder and/or anti-redeposition capacity of the aqueous composition before the contacting step. 21. The method of claim 19 , wherein the isolated glucosyltransferase enzyme comprises an amino acid sequence selected from one with at least 95% identity to SEQ ID NO:1 or SEQ ID NO:2.
