Circular stapling instruments and anvil assemblies. The anvil assemblies may have collapsible anvil support members that may be inserted through an opening in a patient and then expanded to be attached to an anvil plate assembly that has a staple-forming surface thereon. The anvil support member is attachable to the anvil plate assembly in such a way that when the anvil assembly is coupled to the stapling head of a circular stapler, the staple-forming surface is in substantial registry with the staples supported in the stapling head. A variety of different anvil support members and anvil plate assemblies are disclosed.

What is claimed is: 1. An anvil assembly for a surgical stapling instrument, wherein said anvil assembly comprises: an anvil shaft configured to be operably and removably coupled to an actuator portion of the surgical stapling instrument; a reconfigurable bearing plate assembly that is selectively reconfigurable from a collapsed bearing plate configuration to an expanded bearing plate configuration in which said reconfigurable bearing plate assembly is receivable on said anvil shaft; and a reconfigurable anvil plate assembly that is selectively reconfigurable from a collapsed anvil plate configuration to an expanded anvil plate configuration in which said reconfigurable anvil plate assembly is removably receivable on said anvil shaft adjacent said reconfigurable bearing plate assembly, and wherein when said reconfigurable anvil plate assembly is in said expanded anvil plate configuration, an annular array of staple forming pockets is formed on an underside thereof. 2. The anvil assembly of claim 1 , wherein said reconfigurable bearing plate assembly comprises: a first bearing plate segment; and a second bearing plate segment coupled to said first bearing plate segment by at least one hinge. 3. A method of deploying the anvil assembly of claim 2 into a patient, wherein said method comprises: installing a trocar through an abdominal wall of the patient, wherein the trocar comprises a trocar cannula configured to form a passage through the abdominal wall; inserting the anvil shaft of the anvil assembly into the patient; configuring the reconfigurable bearing plate assembly of the anvil assembly in the collapsed bearing plate configuration; inserting the reconfigurable bearing plate assembly in the collapsed bearing plate configuration through the trocar cannula into the patient adjacent to the anvil shaft; reconfiguring the reconfigurable bearing plate assembly into the expanded bearing plate configuration; installing the reconfigurable bearing plate assembly in the expanded bearing plate configuration onto the anvil shaft in a predetermined position; configuring the reconfigurable anvil plate assembly of the anvil assembly in the collapsed anvil plate configuration; inserting the reconfigurable anvil plate assembly in the collapsed anvil plate configuration through the trocar cannula into the patient adjacent to the anvil shaft; reconfiguring the reconfigurable anvil plate assembly into the expanded anvil plate configuration; and affixing the reconfigurable anvil plate assembly in the expanded anvil plate configuration to the reconfigurable bearing plate assembly. 4. The method of claim 3 , wherein said affixing the reconfigurable anvil plate assembly to the reconfigurable bearing plate assembly comprises releasably affixing the reconfigurable anvil plate assembly to an underside of the reconfigurable bearing plate assembly. 5. The method of claim 3 further comprising: inserting a surgical stapling device into the patient adjacent to the anvil assembly; and operably coupling the anvil assembly to the surgical stapling device. 6. The method of claim 5 , wherein said inserting the anvil shaft of the anvil assembly into the patient comprises inserting the anvil shaft through a natural orifice in the patient, and wherein said inserting the surgical stapling device into the patient comprises inserting the surgical stapling device through the natural orifice. 7. The anvil assembly of claim 1 , wherein said anvil shaft further comprises an anvil cap, and wherein when said reconfigurable bearing plate assembly is in said expanded bearing plate configuration, said reconfigurable bearing plate assembly is removably receivable on said anvil shaft adjacent said anvil cap. 8. The anvil assembly of claim 1 , wherein when said reconfigurable anvil plate assembly is in said expanded anvil plate configuration and said reconfigurable bearing plate assembly is in said expanded bearing plate configuration, said reconfigurable anvil plate assembly abuts an underside of said reconfigurable bearing plate assembly. 9. The anvil assembly of claim 1 , wherein said reconfigurable anvil plate assembly is configured to be releasably attached to an underside of said reconfigurable bearing plate assembly when said reconfigurable bearing plate assembly is in said expanded bearing plate configuration and said reconfigurable anvil plate assembly is in said expanded anvil plate configuration. 10. The anvil assembly of claim 1 , wherein said reconfigurable anvil plate assembly comprises a plurality of anvil plate segments, wherein said plurality of anvil plate segments are interconnected together by a plurality of hinges. 11. The anvil assembly of claim 10 , wherein each said hinge of said plurality of hinges protrudes outward from an upper surface of said reconfigurable anvil plate assembly when said reconfigurable anvil plate assembly is in said expanded anvil plate configuration. 12. The anvil assembly of claim 11 , wherein said reconfigurable anvil plate assembly is configured to be releasably attached to an underside of said reconfigurable bearing plate assembly when said reconfigurable bearing plate assembly is in said expanded bearing plate configuration and said reconfigurable anvil plate assembly is in said expanded anvil plate configuration. 13. The anvil assembly of claim 12 , wherein said underside of said reconfigurable bearing plate assembly comprises a plurality of cavities therein, wherein each said cavity is configured to releasably received a protruding portion of a corresponding one of said hinges therein. 14. The anvil assembly of claim 13 , wherein each said protruding portion of said hinge is configured to snappingly engage said corresponding cavity in said underside of said reconfigurable bearing plate assembly to releasably affix said reconfigurable anvil plate assembly to said underside of said reconfigurable bearing plate assembly. 15. The anvil assembly of claim 13 , wherein said reconfigurable bearing plate assembly comprises a bearing plate locator formation configured to cooperate with an anvil shaft locator portion on said anvil shaft to locate said reconfigurable bearing plate assembly in a bearing plate aligned position on said anvil shaft when said reconfigurable bearing plate assembly is in said expanded bearing plate configuration. 16. The anvil assembly of claim 15 , wherein said reconfigurable anvil plate assembly comprises an anvil plate locator formation thereon configured to cooperate with said anvil shaft locator portion on said anvil shaft to locate said reconfigurable anvil plate assembly in a mating position relative to said reconfigurable bearing plate assembly when said reconfigurable bearing plate assembly is in said expanded bearing plate configuration and said reconfigurable anvil plate assembly is in said expanded anvil plate configuration, and wherein said protruding portion of each said hinge on said reconfigurable anvil plate assembly is receivably aligned with said cavity corresponding thereto in said reconfigurable bearing plate assembly. 17. The anvil assembly of claim 10 , wherein said plurality of anvil plate segments comprises four arcuate anvil plate segments coupled together by said hinges, and wherein each said arcuate anvil plate segment comprises a releasable latch feature configured to releasably retain said reconfigurable anvil plate assembly in said expanded anvil plate configuration. 18.
