Methods and devices heat or cool viscous materials, such as meat emulsions useful for producing food and other products. The devices have a heat exchanger including a first plate, a second plate attached to the first plate, and a first spacer and a second spacer arranged between the first plate and the second plate. The first plate, the second plate, the first spacer, and the second spacer define at least one temperature controlled passage for a product to pass through the heat exchanger.

What is claimed is: 1. A device comprising: a first pressure plate; a first energy exchanging plate attached to the first pressure plate; at least one second energy exchanging plate, the at least one second energy exchanging plate comprising a first surface facing the first energy exchanging plate and further comprising a second surface facing an opposite direction from the first surface; a first spacer and a second spacer arranged between the first energy exchanging plate and the at least one second energy exchanging plate, wherein the first energy exchanging plate, the first surface of the at least one second energy exchanging plate, the first spacer and the second spacer define a first temperature controlled passage for a first product to pass through the device; a second pressure plate; a third energy exchanging plate attached to the second pressure plate, wherein the first energy exchanging plate, the at least one second energy exchanging plate and the third energy exchanging plate each comprise energy exchanging capabilities; a third spacer and a fourth spacer arranged between the at least one second energy exchanging plate and the third energy exchanging plate, wherein the second surface of the at least one second energy exchanging plate, the third energy exchanging plate, the third spacer and the fourth spacer define a second temperature controlled passage for a second product to pass through the device, wherein the first energy exchanging plate and the at least one second energy exchanging plate are sealed along the first spacer and the second spacer to withstand internal pressures in the first passage from 50 to 1500 psi, and the at least one second energy exchanging plate and the third energy exchanging plate are sealed along the third spacer and the fourth spacer to withstand internal pressures in the second passage from 50 to 1500 psi; a first end plate defining a first product inlet into the first temperature controlled passage and a second product inlet into the second temperature controlled passage; a second end plate defining a first product outlet from the first temperature controlled passage and a second product outlet from the second temperature controlled passage, and the first and second end plates are positioned perpendicular to the first energy exchanging plate, the at least one second energy exchanging plate, and the third energy exchanging plate such that the first product inlet, the first product outlet, and the first temperature controlled passage are positioned in a first plane, and the first temperature controlled passage extends from the first product inlet to the first product outlet entirely in the first plane, and the second product inlet, the second product outlet, and the second temperature controlled passage are positioned in a second plane, and the second temperature controlled passage extends from the second product inlet to the second product outlet entirely in the second plane, and the first plane and the second plane are parallel to each other and to the second plate; and an inlet manifold attached at an end of the device, the inlet manifold defining an inlet passage that divides into a first outlet passage and a second outlet passage, the first outlet passage leading into the first temperature controlled passage of the device and the second outlet passage leading into the second temperature controlled passage of the device; a first bracket that abuts a top surface of the first pressure plate, wherein the first bracket comprises a first leg, a second leg, and a bridging portion extending from the first leg of the first bracket to the second leg of the first bracket; and a second bracket that abuts a bottom surface of the second pressure plate, wherein the second bracket comprises a first leg, a second leg, and a bridging portion extending from the first leg of the second bracket to the second leg of the second bracket, wherein the first leg of the first bracket is connected to the first leg of the second bracket, and the second leg of the first bracket is connected to the second leg of the second bracket, wherein the first end plate, which comprises the first and second product inlets, is connected to the bridging portion of the first bracket and the bridging portion of the second bracket. 2. The device of claim 1 , wherein at least one of the first energy exchanging plate, the at least one second energy exchanging plate or the third energy exchanging plate define a temperature controlled zone, and wherein the at least one of the first energy exchanging plate, the at least one second energy exchanging plate or the third energy exchanging plate comprises a temperature controlling passage through a portion of the at least one of the first energy exchanging plate, the second energy exchanging plate or the third energy exchanging plate. 3. The device of claim 2 wherein the temperature controlling passage comprises a fluid that cools or heats the temperature controlled zone of the device. 4. The device of claim 1 wherein the first energy exchanging plate and the at least one second energy exchanging plate define a plurality of temperature controlled zones. 5. The device of claim 4 wherein at least one of the first energy exchanging plate or the at least one second energy exchanging plate comprises a plurality of separate temperature controlling passages through individual portions of the first energy exchanging plate or the second energy exchanging plate. 6. The device of claim 5 wherein the plurality of separate temperature controlling passages comprise a fluid that cools or heats the temperature controlled zones of the device. 7. The device of claim 1 wherein the at least one second energy exchanging plate and the third energy exchanging plate define a plurality of temperature controlled zones. 8. The device of claim 7 wherein at least one of the at least one second energy exchanging plate or the third energy exchanging plate comprises a plurality of separate temperature controlling passages through individual portions of the second plate or the third plate. 9. The device of claim 8 wherein the plurality of separate temperature controlling passages comprise a fluid that cools or heats the temperature controlled zones of the device. 10. The device of claim 1 wherein the first energy exchanging plate, the at least one second energy exchanging plate and the third energy exchanging plate are attached together by at least one bolt, screw or clamp. 11. The device of claim 1 , wherein the first product and the second product are the same. 12. The device of claim 1 , wherein the inlet manifold comprises a front portion defining a manifold inlet, the inlet manifold further comprising a rear portion that is a manifold plate defining manifold outlets comprising a first manifold outlet fluidly connected to the first product inlet of the first end plate and a second manifold outlet fluidly connected to the second product inlet of the first end plate. 13. The device of claim 1 , wherein the at least one second energy exchanging plate comprises an upper second energy exchanging plate and a lower second energy exchanging plate, the device having a configuration selected from the group consisting of (i) the upper second energy exchanging plate defines the first surface of the at least one second energy exchanging plate, and the lower second energy exchanging plate defines the second surface of the at least one second energy exchanging plate, and (ii) the upper second energy exchanging plate defines the second surface of the at least one second energy exchanging plate, and the lower second energy exchanging plate defines the first
