A crystalline pigment or colorant composition having high color intensity and/or low sugar content, and methods and processes of preparation. The composition may comprise purified fruit and/or vegetable color juices.

What is claimed is: 1. A composition, comprising: a crystalline pigment or mixture of pigments derived from plants, wherein the composition has a color intensity of at least about 5% to 200% higher than that of a raw juice extracted from a plant from which the crystalline pigment or mixture of pigments are derived, wherein the composition has decreased sugar on a dry weight basis compared to the raw juice, wherein the composition has micropores within its crystal structure, and wherein the composition is used with one or more of food, drug, and cosmetic products. 2. The composition of claim 1 , wherein the composition has a sugar content by dry weight that is less than about 5-20% of that in the raw juice. 3. The composition of claim 1 , wherein the color intensity of the composition is greater than about 40,000 color units. 4. The composition of claim 1 , wherein the pigment is a red grape anthocyanin and the composition has a color intensity of about 40,000-55,000 color units. 5. The composition of claim 1 , wherein the pigment is a purple carrot anthocyanin and the composition has a color intensity of about 90,000-125,000 color units. 6. The composition of claim 1 , wherein the composition has a total sugar content by dry weight of less than 20% of that in the raw juice. 7. The composition of claim 1 , wherein the pigment is selected from the group consisting of anthocyanins, carotenoids, betalains, curcumin, carminic acid, and carminic acid derivatives. 8. The composition of claim 1 , wherein the composition has a bulk density of at least 0.62 g/cm 3 . 9. The composition of claim 1 , wherein a particle size of the crystalline pigment is between about 50 and 425 micro-meters (μm). 10. The composition of claim 1 , wherein the crystalline pigment has less than 8% moisture by weight.
