Circular stapling instruments and anvil assemblies. The anvil assemblies may have collapsible anvil support members that may be inserted through an opening in a patient and then expanded to be attached to an anvil plate assembly that has a staple-forming surface thereon. The anvil support member is attachable to the anvil plate assembly in such a way that when the anvil assembly is coupled to the stapling head of a circular stapler, the staple-forming surface is in substantial registry with the staples supported in the stapling head. A variety of different anvil support members and anvil plate assemblies are disclosed.

What is claimed is: 1. An anvil for a circular surgical stapling instrument that includes a circular staple cartridge that includes a plurality of surgical staples stored in spaced staple pockets that are arranged in a circular array therein, said anvil comprising: an anvil support structure removably attachable to the circular surgical stapling instrument; a plurality of anvil plate segments movably interconnected and reconfigurable from a first orientation wherein said anvil plate segments may be inserted through a cannula opening as a unit and then reconfigured into a second orientation in the form of a substantially planar anvil plate assembly that has a diameter that is larger than the cannula opening, each said anvil plate segment comprising an arcuate array of spaced, staple forming pockets therein that cooperate to form a circular array of said staple forming pockets in said planar anvil plate assembly that corresponds to the circular array of spaced staple pockets in the circular staple cartridge; and means for removably coupling the planar anvil plate assembly to said anvil support structure when said anvil support structure is in an expanded configuration such that each said staple forming pocket in said planar anvil plate assembly is positioned in forming registration with a corresponding staple pocket in the circular staple cartridge when said anvil is coupled to the circular surgical stapling instrument. 2. The anvil of claim 1 , wherein said plurality of anvil plate segments are attached to a flexible substrate. 3. The anvil of claim 1 , wherein each said anvil plate segment comprises: an arcuate metal body comprising two notched ends and a forming face; an outer arcuate array of spaced outer staple forming pockets in said forming face; and an inner arcuate array of spaced inner staple forming pockets in said forming face. 4. The anvil of claim 1 , wherein said anvil support structure is selectively collapsible to a collapsed position from an expanded position wherein said anvil support structure is attachable to said planar anvil plate assembly. 5. The anvil of claim 4 , wherein said anvil support structure is insertable through the cannula opening when in said collapsed position. 6. The anvil of claim 4 , wherein said anvil support structure comprises: an anvil shaft removably attachable to a trocar shaft of the circular surgical stapling instrument; a plurality of distal links pivotally coupled to said anvil shaft; a plurality of proximal links, wherein each said proximal link corresponds to one of said distal links and is pivotally coupled thereto, each said proximal link pivotally coupled to a lock ring that is movably supported on said anvil shaft between a proximal position corresponding to said collapsed position and a distal position corresponding to said expanded position; and a lock arrangement on said anvil shaft for retaining said lock ring in said distal position. 7. The anvil of claim 6 , wherein said means for removably coupling comprises a first latch feature on each said proximal link that is configured to releasably engage a corresponding second latch feature on a corresponding one of said plurality of anvil plate segments. 8. The anvil of claim 1 , wherein, when said plurality of anvil plate segments are reconfigured into said second orientation in the form of a substantially planar anvil plate assembly, and wherein notched ends of each said anvil plate segments are interlocked with corresponding notched ends of adjacent said anvil plate segments. 9. An anvil assembly for a circular surgical stapling instrument, said anvil assembly comprising: an anvil shaft operably attachable to the circular surgical stapling instrument; an anvil body coupled to said anvil shaft; a pair of diametrically opposed first anvil segments movably coupled to said anvil body and being selectively axially movable relative thereto in a first axial direction from an expanded position to a collapsed position, each said first anvil segment comprising a first forming face including a plurality of staple forming pockets therein; and a pair of diametrically opposed second anvil segments movably coupled to said anvil body and being selectively axially movable relative thereto in a second axial direction from said expanded position to said collapsed position, wherein said second axial direction is opposite to said first axial direction, each said second anvil segment comprising a second forming face including another plurality of said staple forming pockets therein. 10. The anvil assembly of claim 9 , wherein each said first anvil segment is movably coupled to corresponding first sides of said anvil body by a corresponding first dovetail joint arrangement and wherein each said second anvil segment is movably coupled to corresponding second sides of said anvil body by a corresponding second dovetail joint arrangement. 11. The anvil assembly of claim 9 , wherein said plurality of staple forming pockets in said first forming face of each said first anvil segment and said plurality of said another staple forming pockets in said second forming face of each said second anvil segment cooperate to form at least one circular array of said forming pockets and said another staple forming pockets when said anvil assembly is in said expanded position. 12. The anvil assembly of claim 11 , wherein said at least one circular array of said forming pockets and said another staple forming pockets comprises: an inner circular array of said forming pockets and said another staple forming pockets; and an outer circular array of said forming pockets and said another staple forming pockets. 13. The anvil assembly of claim 9 , wherein said first axial direction comprises a distal direction and wherein said second axial direction comprises a proximal direction. 14. The anvil assembly of claim 9 , further comprising means for removably affixing said anvil shaft to a trocar shaft of the circular surgical stapling instrument. 15. The anvil assembly of claim 14 , wherein said means for removably affixing said anvil shaft to the trocar shaft of the circular surgical stapling instrument comprises: a pair of spaced anvil tabs protruding from a proximal end of said anvil shaft; and a detent on the trocar shaft corresponding to each said anvil tab for releasable engagement therewith. 16. The anvil assembly of claim 15 , wherein the trocar shaft further comprises a plurality of fins thereon, the fins being oriented relative to said spaced anvil tabs such that each said anvil tab is receivable between a corresponding two of the fins to prevent said anvil shaft from rotating relative to the trocar shaft when the anvil shaft is removably coupled thereto.
