A mist management system for a processing machine includes a pressure distribution assembly configured to evacuate mist from a portion of the processing machine into a plenum using pressure differences between the portion of the processing machine and the plenum. In one aspect, the system may include a mist directing assembly configured to purposefully direct mist toward the plenum using movement and momentum of the mist.

The embodiments of the invention in which an exclusive property or privilege is claimed are defined as follows: 1. A mist management system for a food processing machine having a food portioning station configured to portion a workpiece within an enclosed portioner housing having a first side wall extending along a longitudinal direction of the food portioning station, a second side wall extending along the longitudinal direction, at least one hood portion between the first side wall and the second side wall, and at least one end wall between the first side wall and the second side wall, using at least one liquid jet cutter and a conveyor configured to move the workpiece in the longitudinal direction beneath the at least one liquid jet cutter, wherein mist is generated within the enclosed portioner housing during operation of the at least one liquid jet cutter, the mist management system comprising: a plenum comprising: a low pressure plenum chamber positioned external to the second side wall of the enclosed portioner housing and configured to withdraw mist from the enclosed portioner housing, and one or more orifices through the second side wall of the enclosed portioner housing, positioned below the conveyor in communication with the low pressure plenum chamber; and at least one opening through the at least one hood portion of the enclosed portioner housing and configured to direct air into a top portion of the enclosed portioner housing, through the conveyor, and into the low pressure plenum chamber. 2. The mist management system of claim 1 , further comprising a mist directing assembly configured to purposefully direct mist within the food portioning station toward the plenum using movement and momentum of the mist. 3. The mist management system of claim 1 , wherein the low pressure plenum chamber extends along a length of the enclosed portioner housing. 4. The mist management system of claim 3 , wherein the one or more orifices includes a plurality of orifices arranged to create a substantially even pressure drop along a length of the plenum. 5. The mist management system of claim 1 , wherein the one or more orifices comprise a first orifice and a second orifice, wherein the first orifice has a first size and the second orifice has a second size that differs from the first size. 6. The mist management system of claim 1 , further comprising a sloped floor of the enclosed portioner housing positioned below the food portioning station, wherein the sloped floor is configured to direct mist toward the plenum. 7. A processing machine, comprising: a food portioning station, comprising: at least one liquid jet cutter configured to portion a workpiece within an enclosed portioner housing having a first side wall extending along a longitudinal direction of the food portioning station, a second side wall extending along the longitudinal direction, at least one hood portion between the first side wall and the second side wall, and at least one end wall between the first side wall and the second side wall, using, wherein mist is generated during operation of the at least one liquid jet cutter; and a conveyor configured to move the workpiece in the longitudinal direction beneath the at least one liquid jet cutter; and a mist management system configured to withdraw mist from the enclosed portioner housing, comprising: a plenum, comprising: a low pressure plenum chamber positioned external to and extending along at least a portion of the second side wall of the enclosed portioner housing; and one or more orifices through the second side wall of the enclosed portioner housing, positioned below the conveyor in communication with the low pressure plenum chamber; and at least one opening through the at least one hood portion of the enclosed portioner housing and configured to direct air into a top portion of the enclosed portioner housing, through the conveyor, and into the low pressure plenum chamber. 8. The processing machine of claim 7 , wherein the one or more orifices includes a plurality of orifices arranged to create a substantially even pressure drop along a length of the plenum. 9. The processing machine of claim 7 , wherein the one or more orifices comprise a first orifice and a second orifice, wherein the first orifice has a first size and the second orifice has a second size that differs from the first size. 10. The processing machine of claim 7 , further comprising a sloped floor of the enclosed portioner housing positioned below the food portioning station, wherein the sloped floor is configured to direct mist toward the plenum.
