Stabilized use solutions of low phosphorus, alkali metal carbonate detergents employing enzymes for cleaning compositions are disclosed. In particular, the present invention is a composition for, and method of, removing soils, preventing redeposition of protein soils and reducing foam, using stabilized enzyme cleaning compositions, namely use solutions of the same.

What is claimed is: 1. A solid multi-use detergent composition comprising: from about 30 wt-% to about 90 wt-% of an alkali metal carbonate alkalinity source; from about 0.01 wt-% to about 10 wt-% of an enzyme; from about 0.01 wt-% and about 30 wt-% of a soluble starch or polysaccharide stabilizing agent; from about 1 wt-% to about 8 wt-% of a surfactant; and water, wherein said detergent has an alkaline pH of at least about 9; wherein the enzyme is an amylase, protease, lipase, cellulase, cutinase, gluconase, peroxidase, or mixture thereof; wherein the surfactant is selected from the group consisting of a nonionic, amphoteric, zwitterionic, and mixture thereof; and wherein a use solution of the composition retains 60% of its enzymatic activity at temperatures between about 65-80° C. for at least about 20 minutes. 2. The composition of claim 1 , wherein said stabilizing agent is a polysaccharide, amylose, amylopectin, pectin, inulin, modified inulin, potato starch, modified potato starch, corn starch, modified corn starch, wheat starch, modified wheat starch, rice starch, modified rice starch, cellulose, modified cellulose, dextrin, dextran, maltodextrin, cyclodextrin, glycogen, oligiofructose, a soluble or partially soluble starch, derivatives thereof, or a mixture thereof. 3. The composition of claim 1 , wherein said stabilizing agent is a polysaccharide selected from an amylose and/or amylopectin-containing starch. 4. The composition of claim 1 , wherein said detergent composition comprises between about 50 wt-% and about 85 wt-% of the alkali metal carbonate, between about 5 wt-% and about 30 wt-% of water, between about 0.01 wt-% and about 5 wt-% of the enzyme, and between about 0.1 wt-% and about 10 wt-% of the stabilizing agent. 5. The composition of claim 1 , further comprising at least one component selected from the group consisting of a chelating agent and an additional enzyme stabilizing agent. 6. The composition of claim 1 , wherein said detergent is phosphorus-free, nitrilotriacetic acid-free, or both. 7. A stabilized multi-use detergent use solution composition produced by the process comprising: providing a detergent composition comprising: an alkali metal carbonate alkalinity source; an enzyme; a polysaccharide stabilizing agent; a surfactant; and water, wherein said detergent composition is provided in one or more solid and/or liquid compositions; and contacting the detergent composition with a diluent to generate an aqueous use solution; wherein said use solution has an alkaline pH of at least about 9; wherein the enzyme is an amylase, protease, lipase, cellulase, cutinase, gluconase, peroxidase, or mixture thereof; wherein the surfactant is selected from the group consisting of a nonionic, amphoteric, zwitterionic, and mixture thereof; wherein the detergent composition comprises from about 30 wt-% to about 90 wt-% of the alkali metal carbonate alkalinity source; from about 0.01 wt-% to about 10 wt-% of the enzyme; from about 0.01 wt-% and about 30 wt-% of the polysaccharide stabilizing agent; and from about 1 wt-% to about 8 wt-% of the surfactant; and wherein said enzyme retains 60% of its enzymatic activity in said use solution for at least 20 minutes at temperatures between about 65-80° C. 8. The composition of claim 7 , wherein the use solution retains at least about 40% of its enzymatic activity for 40 minutes. 9. The composition of claim 8 , wherein said stabilizing agent is an amylose and/or amylopectin-containing starch. 10. The composition of claim 8 , wherein said detergent composition comprises between about 50 wt-% and about 85 wt-% of the alkali metal carbonate alkalinity source, between about 5 wt-% and about 30 wt-% of water, between about 0.01 wt-% and about 5 wt-% of the enzyme, and between about 0.0001 wt-% and about 30 wt-% of the stabilizing agent. 11. The composition of claim 8 , wherein said use solution comprises between about 10 ppm to 2000 ppm of the stabilizing agent and between about 0.1 ppm to 100 ppm of the enzyme. 12. The composition of claim 8 , wherein said detergent use solution further contains at least one additional functional ingredient of defoaming agents, anti-redeposition agents, bleaching agents, solubility modifiers, dispersants, rinse aids, polymers, metal protecting agents, additional stabilizing agents, corrosion inhibitors, sequestrants and/or chelating agents, fragrances and/or dyes, rheology modifiers or thickeners, hydrotropes or couplers, buffers, solvents, and combinations thereof. 13. A method of cleaning using a stabilized multi-use detergent composition comprising: generating a use solution with a detergent composition comprising an alkali metal carbonate alkalinity source, an enzyme, a soluble starch or polysaccharide stabilizing agent, surfactant; and water, wherein said detergent composition is provided in one or more solid and/or liquid compositions; contacting a surface with said use solution; and cleaning said surface with said use solution, wherein the enzyme is an amylase, protease, lipase, cellulase, cutinase, gluconase, peroxidase, or mixture thereof; wherein the surfactant is selected from the group consisting of a nonionic, amphoteric, zwitterionic, and mixture thereof; wherein the detergent composition comprises from about 30 wt-% to about 90 wt-% of the alkali metal carbonate alkalinity source; from about 0.01 wt-% to about 10 wt-% of the enzyme; from about 0.01 wt-% and about 30 wt-% of the polysaccharide stabilizing agent; and from about 1 wt-% to about 8 wt-% of the surfactant; and wherein said use solution has an alkaline pH of at least about 9, and wherein said use solution retains at least about 60% of its enzymatic activity for at least 20 minutes at temperatures between about 65-80° C. 14. The method of claim 13 , wherein said use solution retains at least about 40% of its enzymatic activity for at least about 40 minutes. 15. The method of claim 13 , wherein said use solution retains at least about 50% of its enzymatic activity for at least about 60 minutes at the pH of at least about 9 and temperatures between about 65-80° C. 16. The method of claim 13 , wherein said enzyme is present in the use solution between about 0.1 ppm and about 100 ppm and wherein said stabilizing agent is present in the use solution at a concentration of between about 0.1 ppm and about 10,000 ppm. 17. The method of claim 13 , wherein said enzyme is present in the use solution between about 0.1 ppm and about 100 ppm and wherein said stabilizing agent is present in the use solution at a concentration of between about 10 ppm and about 1,000 ppm. 18. The method of claim 13 , wherein said surface is a surface of a ware. 19. The method of claim 13 , wherein said detergent composition is a multi-use solid detergent composition. 20. The method of claim 13 , wherein said enzyme is a protease and the stabilizing agent is a polysaccharide.
