The present application relates to a composition for producing D-psicose comprising (a) a D-psicose 3-epimerase, a strain expressing the enzyme or a culture of the strain, and (b) at least one salt selected from the group consisting of an aluminate and an iodate, and a method for producing D-psicose from D-fructose or a method for increasing the conversion of D-fructose into D-psicose comprising adding (b) to (a).

The invention claimed is: 1. A composition for producing D-psicose, comprising (a) a D-psicose 3-epimerase, a microorganism expressing a D-psicose 3-epimerase or a culture of a microorganism expressing a D-psicose 3-epimerase and (b) at least one salt selected from the group consisting of aluminates and iodates. 2. The composition according to claim 1 , further comprising D-fructose. 3. A method for producing D-psicose from D-fructose, comprising adding at least one salt selected from the group consisting of aluminates and iodates to a D-psicose 3-epimerase, a microorganism expressing a D-psicose 3-epimerase or a culture of a microorganism expressing a D-psicose 3-epimerase, and adding D-fructose before, after, or simultaneously with the addition of the salt. 4. A method for increasing the conversion rate of D-fructose to D-psicose using a D-psicose 3-epimerase, comprising adding at least one salt selected from the group consisting of aluminates and iodates to a D-psicose 3-epimerase, a microorganism expressing a D-psicose 3-epimerase or a culture of a microorganism expressing a D-psicose 3-epimerase, and adding D-fructose before, after, or simultaneously with the addition of the salt.
