A device for measuring the flow rate and viscosity of ink sent to a print head of an ink jet printer comprises: a restriction of the diameter of a conduit for the flow of ink arranged in the path thereof defined by the conduit; a sensor for measuring the pressure difference (P in -P out ) between the pressure of fluid upstream of the restriction and the pressure of ink downstream of the restriction; a viscous leak, creating a pressure drop by friction loss, the viscous leak being in series with the restriction, in the path of the ink defined by the conduit; a sensor for measuring the pressure difference (P inV -P outV ) between the pressure of fluid upstream of the viscous leak and the pressure of ink downstream of the viscous leak; and a circuit for calculating the flow rate and viscosity of ink as a function of: (P in -P ou)t and (P inV -P outV ).

The invention claimed is: 1. Device for measuring the flow rate and the viscosity of ink sent to a print head of an ink jet printer, comprising: a restriction of the diameter of a conduit for the flow of ink, arranged in the path thereof defined by said conduit, at least one sensor for measuring the pressure difference (P in -P out ), between the pressure of fluid upstream of the restriction (P in ) and the pressure of ink downstream of the restriction (P out ), at least one viscous leak, creating a pressure drop by friction loss, said at least one viscous leak being in series with said restriction, in the path of the ink defined by said conduit, at least one sensor for measuring the pressure difference (P inV -P outV ), between the pressure of fluid upstream of said at least one viscous leak (P inV ) and the pressure of ink downstream of said at least one viscous leak (P outV ), a circuit or a controller for calculating the flow rate and the viscosity of ink as a function of: the pressure difference (P in -P out ) between the pressure of fluid upstream of the restriction (P in ) and the pressure of ink downstream of the restriction (P out ); and the pressure difference (P inV -P outV ), between the pressure of fluid upstream of said at least one viscous leak (P inV ) and the pressure of ink downstream of said at least one viscous leak (P outV ). 2. Device according to claim 1 , said circuit or controller being capable of, or programmed to, calculate said flow rate and said viscosity as a function of: the hydraulic characteristics (α, β) of said restriction and the hydraulic characteristic (βV) of said at least one viscous leak; the specific gravity (ρ); said pressure difference (P in -P out ), between the pressure of fluid upstream of the restriction (P in ) and the pressure of ink downstream of the restriction (P out ), and said pressure difference (P inV -P outV ) between the pressure of fluid upstream of said at least one viscous leak (P inV ) and the pressure of ink downstream of said at least one viscous leak (P outV ). 3. Device according to claim 1 , said at least one sensor for measuring the pressure difference (P in -P out ), between the pressure of fluid upstream of the restriction (P in ) and the pressure of ink downstream of the restriction (P out ), comprising a 1 st sensor for measuring the pressure of ink upstream of said restriction and a 2 nd sensor for measuring the pressure of ink downstream of said restriction, and the device further comprising at least a valve for opening or closing a fluidic communication between said 1 st sensor and said 2 nd sensor, and at least a valve for opening or closing a fluidic communication between said 2 nd sensor and a point of a conduit downstream of said restriction. 4. Device according to claim 1 , said at least one sensor for measuring the pressure difference (P inV -P outV ), between the pressure of fluid upstream of said at least one viscous leak (P inV ) and the pressure of ink downstream of said at least one viscous leak (P outV ), comprising a single sensor for measuring the pressure of ink upstream of said at least one viscous leak (P inV ) and downstream of said at least one viscous leak (P outV ), and the device further comprising at least one valve for opening or closing a fluidic communication between said at least one sensor and a point downstream of said at least one viscous leak. 5. Device according to claim 4 , said at least one valve for opening or closing a fluidic communication between said at least one sensor and a point downstream of said at least one viscous leak being a 3-way valve, whereby said sensor is alternatively in fluidic communication with a point downstream of said at least one viscous leak and with the atmospheric pressure. 6. Device according to claim 1 , comprising a 1 st sensor for measuring the pressure of ink upstream of the restriction and a 2 nd sensor for measuring the pressure of ink downstream of the restriction, said circuit or controller being capable of, or programmed for, correcting a measurement difference, for at least one same pressure, between the 1 st sensor and the 2 nd sensor and/or a sensitivity error of at least one of the sensors. 7. Device according to claim 6 , further comprising a temperature sensor, the measurement difference, for at least one same pressure and/or the sensitivity error of at least one of the sensors being corrected as a function of temperature. 8. Device according to claim 1 , said at least one sensor for measuring the pressure difference (P in -P out ), between the pressure of fluid upstream of the restriction (P in ) and the pressure of ink downstream of the restriction (P out ), being arranged in the path of a fluidic conduit arranged in parallel with the restriction. 9. Device according to claim 1 , said at least one viscous leak forming a very long restriction compared to its diameter. 10. Device according to claim 1 , said at least one viscous leak having a ratio greater than 1000 between its length and its diameter. 11. Device according to claim 1 , said at least one viscous leak being in series with said restriction, upstream or downstream of said restriction. 12. Device according to claim 1 , a same common sensor making it possible to measure the pressure of ink downstream of the restriction, and the pressures at the inlet and at the outlet of said at least one viscous leak, said device comprising at least one valve for opening or closing a fluidic communication between said common sensor and a point downstream of said at least one viscous leak. 13. Circuit for supplying with ink and/or with solvent an ink jet printer, this circuit comprising a device for measuring the flow rate and the viscosity, of the ink of an ink jet printer, according to claim 1 , and a circuit or a controller for controlling or servo-controlling or correcting the pressure and the viscosity of ink supplied as a function of the measurements of the flow rate and the viscosity of the ink. 14. Fluidic connecting cable, for an ink jet printer, this cable comprising a device for measuring the flow rate and the viscosity of ink sent to said ink jet printer, according to claim 1 . 15. Ink jet printer comprising: a print head, with one jet or multi-jet; a hydraulic circuit for forming a flow of fluid to send to said print head; a fluidic connecting cable between said hydraulic circuit for forming a flow of fluid and the print head; a device for measuring the flow rate and the viscosity of said fluid according to claim 1 . 16. Printer according to claim 15 , comprising a circuit or controller, capable of, or programmed for, controlling or servo-controlling or correcting the pressure and/or the viscosity of ink as a function of the measurements of the flow rate and the viscosity of the ink. 17. Device for measuring the hydraulic characteristics of a device comprising a restriction of a flow, and at least one viscous leak, creating a pressure drop by friction loss, said at least one viscous leak being in series with said restriction, said hydraulic characteristics comprising the hydraulic characteristics (α, β) of said restriction and the hydraulic characteristic (βV) of said at least one viscous leak, said device comprising : a pressure regulator for providing a regulated pressure; a conduit or a pipe, located downstream of said pressure regulator, the hydraulic characteristics of said conduit or pipe being known; at least one sensor for measuring the pressure difference (P in -P out ), between the pressure of fluid upstream of said conduit or pipe and the pre
