The invention claimed is: 1. A coating colour comprising water, at least one pigment and at least one dextrin, wherein the water content of the coating colour is less than 60% by total weight of the coating colour and the pigment content is greater than 50% by weight of the solids content of the coating colour, wherein the at least one dextrin has a weight-average molecular weight ranging from 250,000 to 1,400,000 Da and a solubility, measured according to a test A, ranging from 50 to 85%, and wherein the at least one dextrin is obtained by a process which comprises: a step of introducing at least one granular starch into a reactor; a step of introducing, into said reactor, at least one acidic agent, said at least one agent being a strong acid; a step of modifying the starch in said reactor; a step of recovering the starch modified in said reactor; wherein at least part of the modifying step is carried out with: a moisture content of the starch of between 1 and 3%; an amount of acid introduced of between 0.003 and 0.020 mol of acid per kg of dry starch; and a temperature of the reactor of between 160 and 215° C. 2. The coating colour according to claim 1 , wherein the polydispersity index of the dextrin is greater than 5. 3. The coating colour according to claim 1 , wherein the dextrin exhibits a solubility according to the test A ranging from 55 to 65%. 4. The coating colour according to claim 1 , wherein the dextrin exhibits a mass fraction of greater than 5% of dextrin molecules with a molecular weight of greater than 1,000,000 Da. 5. The coating colour according to claim 1 , wherein the dextrin comprises, with respect to its total weight: a mass fraction of between 5 and 25% of dextrin molecules with a molecular weight of greater than 1,000,000 Da, a mass fraction of between 25 and 50% of dextrin molecules with a molecular weight of greater than 100,000 Da and less than or equal to 1,000,000 Da, a mass fraction of between 30 and 50% of dextrin molecules with a molecular weight of greater than 10,000 Da and less than or equal to 100,000 Da, a mass fraction of less than 20% of dextrin molecules with a molecular weight of less than or equal to 10,000 Da. 6. The coating colour according to claim 1 , further comprising an additional polymer conventionally used as binder in coating colours, said polymer being selected from the group consisting of styrene polymers, polymers of (meth)acrylic or of (meth)acrylate, saponified or nonsaponified polyvinyl acetates, protein binders, and mixtures thereof. 7. The coating colour according to claim 1 , wherein the coating colour comprises, per 100 parts of pigments, from 1 to 25 parts of dextrin and from 0 to 10 parts of additional polymer, the sum of the parts of dextrin and additional polymer ranging from 4 to 30. 8. The coating colour according to claim 7 , wherein the coating colour comprises, per 100 parts of pigments, from 2 to 15 parts of dextrin and from 2 to 7 parts of additional polymer, the sum of the parts of dextrin and additional polymer ranging from 6 to 25 parts. 9. The coating colour according to claim 1 , wherein the coating colour exhibits a pH ranging from 8 to 10.5. 10. The coating colour according to claim 1 , the solids content of which is between 40 and 85%. 11. The coating colour according to claim 1 , wherein the coating colour exhibits a Brookfield viscosity ranging from 500 to 2000 mPa·s and/or a Hercules viscosity ranging from 40 to 80 MPa·s. 12. A process for preparing a coating colour according to claim 1 , comprising: a step of mixing the water, the pigment, the dextrin and the optional additional polymer; a step of recovering the coating colour; wherein the mixing step is carried out at a temperature ranging from 5 to 50° C. 13. The process for coating paper, further comprising at least one step of coating a paper with the coating colour according to claim 1 . 14. A coated paper obtained from the process according to claim 13 . 15. The coated paper according to claim 14 , wherein the coated paper comprises from 1 to 5 layers, at least one of said layers being obtained from the coating colour. 16. A process for printing a coated paper according to claim 14 , comprising printing is that of offset, heliogravure, rotogravure, lithogravure, ink jet or flexography type.
