According to one embodiment, a range for cooking includes a combustion chamber having a bottom surrounded by sidewalls that extend upward to an upper rim. The range further includes at least one gas burner positioned at the bottom of the combustion chamber, and a platen positioned on the upper rim. The platen has an interior opening above one of the at least one gas burner with a first flange. The range further includes at least one removable outer plate positioned on the first flange of the platen, and an enclosure disposed to surround the gas burner and that is operative to cause preferential heating of the removable inner plate by radiation from a flame at the one of the at least one gas burner and radiation from the enclosure.

The invention claimed is: 1. A range for cooking comprising: a) a combustion chamber having a bottom surrounded by sidewalls that extend upward to an upper rim; b) at least one gas burner positioned at the bottom of the combustion chamber; c) a platen positioned on the upper rim, the platen having an interior opening above one of the at least one gas burner with a first flange; d) at least one removable outer plate positioned on the first flange of the platen; e) an enclosure disposed to surround the gas burner and that is operative to cause preferential heating of the at least one removable outer plate by radiation from a flame at the one of the at least one gas burner and radiation from the enclosure, wherein the enclosure extends upwards to a rim that is disposed within approximately 2 inches of the platen. 2. The range of claim 1 , wherein the at least one removable outer plate has an interior opening above the one of the at least one gas burner with a second flange, and wherein the range further comprises a removable inner plate positioned on the second flange of the at least one removable outer plate. 3. The range of claim 2 , wherein the enclosure is operative to increase the temperature of the removable inner plate when the gas burner is ignited by at least about 40° F. as compared to without the enclosure. 4. The range of claim 1 , wherein the enclosure has a plurality of perforations. 5. The range of claim 4 , wherein the perforations of the enclosure provide a pathway for air to flow inward to support the combustion of gas at the one of the at least one gas burner, and hot combustion gases from a resulting flame flow over the rim of the enclosure toward the upper rim of the combustion chamber. 6. The range of claim 5 , wherein the platen is heated to the portions supported on the upper rim by the hot combustion gases that flow over the rim of the enclosure. 7. The range of claim 6 , wherein the platen is further heated by conduction of heat from the at least one removable outer plate. 8. The range of claim 4 , wherein the enclosure has an inverted frusto-conical shape. 9. The range of claim 1 , wherein the enclosure has a plurality of perforations, and wherein each of the perforations have a diameter of between approximately 0.5 and approximately 1.5 inches. 10. The range of claim 1 , wherein a gap that separates the rim of the enclosure and a bottom portion of the at least one removable plate is at least approximately 0.5 inches. 11. The range of claim 1 , wherein a substantially open cavity between the sidewalls of the combustion chamber and an exterior of the enclosure permits the unimpeded flow of hot combustion gases from a central flame over a rim of the enclosure and toward the upper rim of the combustion chamber. 12. The range of claim 1 , wherein the at least one removable outer plate has a perforation for receiving a removable central plate that is supported thereon. 13. The range of claim 12 , further comprising the removable central plate disposed on a flange that extends inward from the perforation in the at least one removable outer plate. 14. The range of claim 1 , wherein the combustion chamber has a flue for removal of gases flowing from the one of the at least one gas burner, and wherein a gap between an upper rim of the enclosure and a lower surface of the platen provides a passageway for the gases to flow from the one of the at least one gas burner to the flue. 15. The range of claim 1 , further comprising a plurality of heat shields disposed proximal to the bottom of the combustion chamber for reflecting radiated heat from the enclosure toward the platen. 16. A range for cooking comprising: a) a combustion chamber having a bottom surrounded by sidewalls that extend upward to an upper rim; b) a gas burner positioned at the bottom of the combustion chamber; c) a platen positioned on the upper rim, the platen having an interior opening above the gas burner with a flange; d) at least one removable plate positioned on the flange of the platen; and e) a perforated enclosure surrounding a periphery of the gas burner and extending upward towards the at least one removable plate, wherein a gap separates a top portion of the perforated enclosure and a bottom portion of the at least one removable plate, wherein the gap is less than approximately 2 inches. 17. The range for cooking of claim 16 , wherein the perforated enclosure comprises an inverted conical shape. 18. The range for cooking of claim 16 , wherein the perforated enclosure is made of stainless steel. 19. The range for cooking of claim 16 , wherein the perforated enclosure has a thickness of approximately 1-2 millimeters. 20. The range for cooking of claim 16 , wherein the perforated enclosure comprises a plurality of perforations, wherein each perforation has a diameter of approximately 0.5-1.5 inches. 21. The range for cooking of claim 16 , wherein the perforated enclosure comprises a plurality of perforations that make up approximately 20-40 percent of a surface area of the perforated enclosure. 22. The range for cooking of claim 16 , wherein the gap is approximately 1 inch. 23. The range for cooking of claim 16 , wherein the combustion chamber has a flue for removal of gases flowing from the gas burner, and wherein the gap provides a passageway for the gases to flow from the gas burner to the flue. 24. The range for cooking of claim 16 , wherein the at least one removable plate comprises a removable outer plate and a removable inner plate. 25. A range for cooking comprising: a) a combustion chamber having a bottom surrounded by sidewalls that extend upward to an upper rim; b) a gas burner positioned at the bottom of the combustion chamber; the gas burner having a plurality of orifices for emitting a combustible gas to localize a central flame; c) a platen positioned on the upper rim, the platen having an interior opening above the gas burner with a flange; d) at least one removable plate positioned on the flange of the platen; and e) a perforated enclosure disposed to surround the central flame and extending upward towards the at least one removable plate, the perforated enclosure having an upper rim disposed below but substantially aligned with the flange of the platen, wherein the upper rim of the perforated enclosure is disposed within approximately 2 inches of the platen; f) wherein the perforated enclosure comprises a plurality of perforations that make up at least approximately 20 percent of a surface area of the perforated enclosure, wherein a first portion of the plurality of perforations are positioned adjacent a bottom portion of the perforated enclosure, wherein a second portion of the plurality of perforations are positioned adjacent the upper rim of the perforated enclosure; g) wherein the perforated enclosure has a width of less than approximately ¼ to approximately ½ of a width of the combustion chamber, and there is a substantially open cavity between the sidewalls of the combustion chamber and an exterior of the perforated enclosure. 26. A method of cooking comprising: a) providing a first cooking vessel; b) providing a range for cooking, the range for cooking comprising: i) a combustion chamber having a bottom surrounded by sidewalls that extend upward to an upper rim; ii) at least one gas burner positioned at the bottom of the combustion chamber; iii) a platen positioned on
